It’s the season when pumpkins get exploited and wasted (18,000 tonnes every year in the UK) 🎃 Furthermore, 99.9% of pumpkin skins are neglected!
All waste holds hidden potential; it just takes time to uncover it.
This technique is a new milestone for the forthcoming pumpkin skin revolution; this is pure GOLD.
Our inspiration was Hōjicha tea, a roasted green tea.
This was a spectacular triumph for two main reasons: the flavour and the potential to scale this up.
The flavour is identical to toffee apple, naturally sweet, elegant, complex, and so satisfying.
The potential to scale this up is super obvious: the volume of wasted pumpkin skins is enormous, just like the amount of tea we consume. Go figure.
We filled up a Pumpkin-colored flask from, which saves a whopping 1000 plastic bottles from entering the ocean. Save the Pumpkin skins, save the ocean.

We can’t emphasise this enough - This mince is hard to tell apart from pork mince.
In this recipe we made a vegan interpretation of a Thai Krapow that was f****** mind-blowing.
As shown in the video, all you need to do is hydrate the dehydrated mince in a flavourful stock. We used mushroom stock but you could use a veg stock or a dashi… Just get creative and prepare to have your minds 🤯

A garden is a little microcosm of nature’s ecosystems. What’s above ground is a reflection of what’s below ground; when we feed the soil we feed all the plants which feed us and the insects (and occasionally those pesky squirrels). Our worm community is thriving on their favourite diet of food scraps, this thriving population has a thriving output of faeces feeding the soil nutrients.
Buy food grown in healthy soil full of micronutrients; for your own prosperity, but also the worms and the soils prosperity. If you eat food from that soil those micronutrients return back to you. YOU ARE WHAT YOU EAT - EATS 🍌🪱👩🌾♻️

This All-Purpose sauce will fix your next inadequate dinner.
Yes we’ve all been there; regardless of your Jedi skills in the kitchen sometimes you just can’t channel the force. Sometimes the ingredients aren’t in the mood are
Whatever the cosmic excuse might be, this sauce rehabilitates these inevitable little misfires. One sauce to rule them all.
This sauce is similar to the beloved Chimichurri and Salsa verde, the distinction is that these sauces both contain acid whereas this Green Sauce is a rich muscular savoury sauce, abstaining from acidity.

As the world shifts towards a more plant-based diet, indulge in this game-changing 'smoked veg tek' to attract vegans to your yard.
First, a note on smoking strategy:
Cold smoking or hot smoking? Both methods add superhero flavour but cold smoking (as seen here) doesn’t keep cooking the ingredient. In contrast, hot smoking slowly roasts the ingredient, adapting its flavour and weight.
Cold smoking boasts the superhero flavour without wearing the costume; the ingredient maintains its regular appearance until you give it a sniff or take a little nibble, which is when your knees go weak.
As emphasised in this tutorial, the key step to an effective smoky baptism is brining the vegetables. You can thank us later…
The knives are out for this recipe, we’re using the razor sharp Wüsthof classic range.
Pathway to Smoky Excellence:
🔥Peel the vegetables to allow brine and smoke to penetrate.
🔥If you're feeling resourceful, you can make a 'carrot cake' from all the skins.
🔥Steam the vegetables until perfectly done; this will render them porous and enhance penetration.
🔥Brine the vegetables in a 10% saltwater solution for approximately 30 minutes, or longer if they're chunky.
🔥Opt for a propane-fueled blow torch, as the canisters are refillable.
🔥Alternatively, you can use single-use (non-zero waste) butane canisters.
🔥Secure a cast iron pan with a perforated 'cradle' on top, equipped with a lid.
🔥We precariously employed a bamboo steamer.
🔥Torch a handful of wood chips until they catch fire.
🔥Place the vegetable-loaded cradle on top after extinguishing the fire, allowing the smoke to envelop the vegetables.
Let there be fire.

Tepache is a gorgeous traditional Mexican drink that can be made with any fruit. It’s a fermented drink that doesn’t need an existing starter culture (like Kombucha or Kefir). Instead, the natural yeasts from the skins kickstarts a short 8 day fermentation, start to finish.
We’re going to release a bunch of tutorials on various Tepache recipe including banana skins, green coffee and even some using vegetable skins.
