📝omakaseは天本のために作られたとか、、

つまみから食材のクオリティに圧倒されました。
“予習”の時から気になっていた、ニタリクジラの尾の身は油断すると0秒で飲み込んでしまいそうなほどふわふわな質感。めちゃくちゃ美味です。
にぎりからはやはりフジタ鮪。本日は千葉勝浦より。この時期ですが、綺麗な脂は香りが抜群でした。
機会があれば是非また再訪したいお店です。

📝遠いけど、意外と静岡駅から歩いて行ける（遠いけど！笑）

文句なしです。素晴らしいお店でした。
厳かな空気感もありながら、落ち着くお店作りは唯一無二。提供終了まで３時間程度、天国の時間を過ごせました。
全国から食通が集まるお店、是非また伺いたいです。

📝現在予約は一年待ちとのこと。すげえ🫣

場所がめちゃわかりにくいので、初めて行く人は少し早めに行ったほうがいいと思います。
薪は水分量が多く火入れが難しいと聞きますが、さすがプロ。完璧でした。
しかも値段は2万以下。すごいと思います。
（3万超えてくると評価は変わってきますが）

しっとりと焼き上がった肉に、薪ならではの香りが纏っていて他の焼き鳥とは一線を画す逸品ぞろいです。
鶏のリエットは薪焼きされたトーストに乗せて。薪の香りとリエットの口当たりが、たまらない美味。3個食べたいですが、1個であることで食欲が加速します。
胸肉とハリッサソースの相性も素晴らしかったなあ、、
〆も、デザートも最後まで楽しめました。

もはや名前を知ってるだけで相当グルメと言える、こちらのお店(笑)
真鴨は新潟から仕入れているとのこと。
新潟の の鴨肉も相当美味しいので、気になる方はまずそっちから行くのがいいカモ🦆（長吉はホットプレートだけどね）

今年は鴨が15年ぶりの不猟とのことで、真鴨に加えて合鴨も出てきました。
個人的には（鷹匠壽ではなかなかできない）食べ比べが出来て満足です。
300度まで熱せられた玉鋼でいっきに焼くことでふんわりと口当たり優しく、香り高い仕上がりになった真鴨は絶品でした。
今年の真鴨は2月にも関わらず、まだまだ淡白な味わいとのことでしたが僕には全然わかりませんでした笑 普通にめっちゃ美味かったです。
しかしまだこれより旨い鴨が存在するとのことなので、来年も機会があれば伺いたいです。

もう香箱の季節。2杯分の蟹を１つに詰めてある香箱蟹は文句なしの充実感。
服部のすっぽんは今までにあじわったことのない奥深さ。最後の雑炊はぶっ飛んだ。
富田林の海老芋は一つから真ん中の二貫分しか使わないまさに“シャトーブリアン”。ほんのりとした甘みと旨味が堪らなかった。
定番の佃煮もお持ち帰りしたいほど美味しかったです。

つまみ、握りどれをとっても素晴らしい
奥深い旨みやインパクのある美味しさの緩急のバランスも絶妙。
季節ごとに用意されたスペシャリテも面白い
なんといっても、この日はトロ松。
頬張った瞬間から幸せが爆発、余韻もたまりません。
訪問ハードルは高いですが、食を愛する人すべてに食べていただきたい一品です。

鰹にかけられている海苔醤油、これがたまらん酒泥棒。この海苔醤油だけでつまみになる。
スペシャル白子は出汁まで飲み干した。すっきりとした口当たりだけど、滑らかで濃厚な味わい。
定番の特大ばちこ。ちびちびといただきます。
【にぎり】
最初の一貫目は決まってかすご鯛。ポーション大きめの握りは頬張った瞬間からうまいと脳が直感する。噛めば噛むほど味わい深さが増していく。一幸のシグネチャーとなっている一貫。
この日のマグロは大間から。
寒さが増してきた10月末のマグロは脂が乗ってきて美味でした。
そして、今日1番。秋のスペシャリテ、トロ松。まずは松茸ロウリュウで松茸の香りを楽しみます。演出も込みのトロ松です。
炙ったトロをサンドして、シャリと融合させ3つが合わさった姿はまるで
🐉（わからない人はスルーして下さいw）
悶絶しました。一撃ノックアウトでした。
また対戦お願いします。

この日のマグロは八戸より。
血生臭さが微塵もない美味さ100%の赤身。素晴らしい、、初めて赤身をうまいと思った。
中トロはふわふわ、ふわふわとしか表現できない、、絶妙なバランスで入っているサシが美しくシルクのような舌触り。しっかりとした味わいを残しつつとろけていくマグロは確実にいままで食べてきた物の中でNo1
大トロはまさにクリーム。咀嚼して乳化されることでさらに旨みが増す。飲み込んだ後もまだまだ伸び続ける余韻が凄かった！

・マグロの出汁に漬けた中トロは妖艶な美しさ。食べた瞬間から飲み込んだ後まで幸せが続く素晴らしい一貫でした。手の込んだ一品に店にいた美食家全員が唸っていました。
・彩鮮やかな赤イカは雲丹、トビコ、錦胡麻で洗練された美しい見た目。食べた後にそれは見た目を飾るためのものではないと確信出来ました。咀嚼するごとに広がるハーモニーが素晴らしかったです。
どの寿司も言語化困難な一貫ばかりでした。
