The origins of #LAGalbi are somewhat murky, but there is a Jewish cut of beef called #flanken which may hold the key.
The Buddha was born in Nepal, his words traveling East through China and into the Korean peninsula—along the same paths as soy sauce: fermentation, war, nuclear fission, liberation, war, immigration, Los Angeles, and so on…

Background:
When the riots broke out, I was a child growing up in a suburb of Los Angeles—close enough to feel it but far enough to be a mere observer. Like many other Korean-American immigrant households, my family was glued to the television for days watching these scenes of destruction. In those days, local television was the only option we had, so certain popular movies were broadcasted over and over for years—movies like Ghostbusters. The television was our way of experiencing catastrophe.
Trying to think back to the riots, I only see my childhood living room and, of course, a television. Whether it was the Rooftop Koreans or Bill Murray and his partners on top of a skyscraper fighting a supernatural marshmallow, after 30 years, these scenes begin to ferment in the same bucket of my childhood memories. This is how I remember it: in a type of metaphorical and ecstatic disarmament.
Today, many forces have tried to take the Rooftop Koreans and use them in ways to feed certain agenda-machines. Many have tried to look back and take ownership, judge, or interpret these events in ways that work to fulfill today’s grand narratives. But they cannot claim to capture “what happened.” Nothing is static, no book simply closed. No one owns this history. There are only transformations. There are only becomings.
The Stay Puft Marshmallow was Daniel Aykroyd’s sweetest childhood memory—transformed into a monstrous giant that sought his destruction. What does it symbolize here—for me? Nothing. He is here for you—and whatever nightmares, dreams, or “sequels” that you alone are capable of imagining.

The first in a series called “Fermentations.” I hope you will join me as we use the process of fermentation —with its ability to preserve, meld, and transform ingredients— to draw out, reflect, meditate upon, and finally taste cultures, histories, identities, and experiences in incredibly new ways.
