Circumstance Distillery is a modern craft whisky distillery based in Bristol, founded in 2018 and distilling whisky for the past eight years.
Their innovative approach centres on long fermentations lasting up to 14 days — something I’d honestly never come across before. They also work with brewing yeasts, multi-organic grain mash bills including barley, wheat and rye, creative cask maturation and small-batch production.
They use an electric, oil-heated still made from a mix of stainless steel and copper, alongside a column still. This unique setup plays a big role in shaping their distinctive spirit.
After tasting the new makes and their whiskies, the difference was clear — creamy, smooth, fruity and incredibly easy to drink.

Highland Park Cask Strength Heather is a limited-edition single malt whisky celebrating Orkney’s distinctive floral peat. Bottled at a bold 63.6% ABV, it’s crafted from 100% Orkney peat-smoked barley and matured in first-fill European and American sherry-seasoned oak casks, along with select refill casks.
On the nose, expect bonfire smoke, vanilla pods and brandy butter. The palate is rich and oily, bringing marshmallow sweetness, nuts and a touch of peppery spice, with floral smokiness. The finish lingers with soft vanilla and perfumed smoke.
