Chocolate caramel sauce
• 100g white sugar
• 2tbsp water
• 100ml whipping cream
• 1tsp vanilla (optional)
• 25g dark chocolate
• Pinch of salt
Place the sugar in a saucepan (tip: choose a light saucepan to see when the sugar will change color)
Add the water and stir over low heat
Once dissolved, increase the heat and stop stirring
Observe when the syrup turn to an amber color
Remove from heat and pour slowly the cream and stir with a long spoon
Return to low heat, melt any hardened caramel by stirring
Ad the chocolate, vanilla and salt
Stir until everything is combined and smooth
Remove from the heat, and fill it in a jar.
Store it in the fridge up to 2 weeks
