I reproduced a recipe, originally for Plumcake, from a French 1940s handwritten recipe notebook I found at a vide-maison in a beautiful mediaeval village, and made into Madeleines. I translated it into modern-day measurements for y’all to read on Substack, all while using tools from the booklet’s era. They came out wonderful - pillowy, tasty, buttery and crunchy at the edges.

I wrote a little guide to French brocantes, including where to find the affordable options. I’ve been a die-hard junk diver for years - not only because the French secondhand scene is a literal dream for any food photographer and stylist, but also as a way to avoid buying expensive new stuff of dubious quality when there’s plenty of cotton, linen, ceramic and solid wood to be found all round.
The French have a huge sense of responsibility for the environment and I love them for it.
This little guide focuses on kitchenware and serveware, plus a little recipe/mix for cleaning silver using bicarbonate of soda and salt.

Lately I have been obsessed by the thought of food cultures disappearing, that whatever globalisation has us eat tomatoes in November, war, and social media might destroy culinary identities. So I wrote about Mediterranean ingredients, the pillars of med food, where they come from culturally, the need for cooking, and finding some kind of balance between avocado toast and my nonna’s chickpea soup.

An Italian is never alone. Or so I believe, given the hands we hold out for each other outside of our country. 
This pasta is the result of a moment of cooking with Peppe and Matteo, two men whose southern roots dug deep into French soil, and whose musical and culinary talent thrives in this land in which pasta is as loved as it is misunderstood. 
This simple recipe - 15-minutes creamy spaghetti with garlic and parsley and mint embodies the soul of an Italy in which nights are balmy and windows are open from April to October, and in which spaghetti are a valid meal option from breakfast to midnight. 
‘Mantecatura’ is the real, quintessential cooking technique to make a very good bowl of pasta and one I wish I could teach people with the sole laying on of hands, as per a cuoca Napoletana’s holy blessing, her dirty apron with flowers tied tight around her waist as she yells to you to just grab a slice of bread and mop up those juices, that nothing has to go to waste.

Have you ever seen jam made in a traditional copper pot?
I asked my wonderful neighbour Vincent to film the process, so we spent the evening making some 20 pots of jam with the purple figs growing in the humongous tree behind the house.
The recipe is a very basic 80% sugar on the total weight of the fruit, lots of lemon and ginger as I think it works well with fruits that lack acidity, and also inspired by our friend who makes the best jams (food-wise and music-wise)
