Ernazar told me: you can make an okay plov. But people who know plov will travel thirty minutes across the city for the right one. It’s not pizza. It’s not a burger.
They adapt the recipe here - less fat than Tashkent or Samarkand, because Berlin.
Women from Tashkent say it’s better than back home. Men say something’s missing.
The missing thing, Ernazar explained, is fat.
Both of them are right.
Some spices are actually better quality than what’s in Tashkent right now - sourced from Iran. The copy, in some ingredients, outperforms the original. That doesn’t make it the original.
Then he told me about Sardor at the kazan - how he stands there and listens to it from below, because you can’t see the water level, but you can hear whether it’s frying or boiling.
“These are the secrets,” Ernazar said.
Uzbek plov is UNESCO Intangible Cultural Heritage. Tajikistan has a parallel inscription with its own Osh (Tajik Plov).
Ernazar says there are fifty types in Uzbekistan alone - and that all of it possibly traces back to Alexander the Great’s army moving along the Silk Road. Every people made it their own.

He trained with the Uzbek Chefs Association in Tashkent. He was handpicked to cook at the Uzbek embassy in Berlin. For four years he ran the kitchen for the ambassador, staff, German diplomats, state receptions. Events of 300, 400 people.
He’ll tell you cooking was just a hobby.
I asked him what separates good plov from great plov. He started answering in Russian, then stopped. “If it were in Uzbek, I could explain it.”
I found that to be one of the more honest things anyone has said to me on camera.
His kitchen in Schöneberg is quiet, tight, and very good at what it does. People come from all over Germany for it. Watching it run, that doesn’t surprise me at all.

He came to Berlin in 2012 to study economics. Gastronomy wasn’t the plan - until COVID, a poké bar in Mannheim, a Ukrainian family with Uzbek roots, and a question he’d been asking for years: why isn’t there good Central Asian food in this city?
What followed was a Sunday flea market, €1,000, one small kazan, thirty days in the cold at a Christmas market, a first restaurant, a partner dispute, a food truck ordered from Poland that never arrived, a small, cramped imbiss, a former laundromat in Schöneberg, and eight months of building permits.
He built the space by hand. Him, his chef and his team.
They haven’t been here long. It doesn’t show.
