For the Elderflower syrup:
400g sugar
400ml water
20-25 elderflower flower heads, stem removed
Peel of a lemon
Juice of a lemon
For the refresher:
2tbsp of lemon juice (squeeze half lemon)
4-6 tbsp of elderflower syrup
Ice
Orange bitters (optional)
Soda or tonic (fill the rest of the glass)
Method
1. Gently place your foraged goods into a clean white tea towel and pick out any small bug or leftover leaf.
2. Snip off the flowers from the stalks into a large bowl. Try to relive as much of the stems as you can; they can be toxic in big amounts.
3. As the lemon peel and lemon juice into the bowl.
4. Mix equal weight of sugar and water and bring into a soft boil stirring until all the sugar dissolves. Turn off the head and let it cool until you can touch it without burning your finger. Add the syrup into the bowl, gently push the flowers down so everything gets submerged. Cover with plastic film and a towel and let it sit in your counter for 2-3 days.
5. When you’re ready, strain it through a fine mesh or cheesecloth into a clean jar. Seal the jar and store in the fridge
6. Use it right away! It will last a long time.

1 aubergine, cut into big chunks and oven roasted
Arugula
Red pickled onion
Dressing:
Crème Fraîche
Lime juice
1 tsp of olive oil
Salt and pepper
Method:
While the aubergine roasts in the oven at 180-200°C, toss the ingredients together in a serving bowl.
Mix some crème fraîche, the juice of half a lime, olive oil, salt and pepper. Taste and adjust acidity little by little
