Had to celebrate this year by making ’s Gooey Chocolate Oatmeal Bars, and they did not disappoint!🤎🤤 A warm, chewy oatmeal cookie bar with caramel filling and melty Cadbury mini eggs… mmm, seriously heavenly!!!😇🍫

Spring has sprung and these crunchy lil treats are the perfect dessert to enjoy while soaking up the sun!🌞💐 they are made with a creamy cashew butter base instead of marshmallows to keep them on the healthier side!🙃 I love using nut butters because their products have the simplest ingredients with no added sugars and oils, plus the texture is sooo creamy!!

✨RICE KRISPIE INGREDIENTS
-3/4 cup creamy cashew butter
-1/3 cup maple syrup
-2 Tbsp coconut oil
-1 tsp vanilla extract
-2 1/2 cups crispy brown rice cereal
-1/4 cup sprinkles (+more for garnish)

🍫CHOCOLATE DRIZZLE
-3 Tbsp dark chocolate chips
-1 tsp coconut oil
.
✨Instructions:
-Line an 8x8 in pan with parchment paper
-Add cashew butter, coconut oil, maple syrup, and vanilla extract to a pot over medium heat. Mix ingredients until smooth and well combined
-Next, add in the crispy brown rice cereal and sprinkles. Stir until combined and all cereal is coated
-Pour into prepared pan and spread evenly. (Pro tip - use a sheet of wax paper to evenly flatten the Rice Krispies and avoid them sticking to your spatula!)
-Next, prepare chocolate drizzle by melting the dark chocolate and coconut oil in a microwave safe bowl. Drizzle over the bars, garnish with more sprinkles, and cut into 16 bars. Enjoy!!

✨Ingredients:
-1 lb short cut pasta (I used chickpea Rigatoni for extra protein!)
-2 Italian Beef Chomps sticks (sliced thin)
-1/4 cup extra virgin olive oil
-4 cloves garlic, finely chopped
-1 shallot, finely chopped
-1 tsp crushed red pepper
-1 cup tomato paste
-1/4 cup vodka (sub chicken broth or water)
-1 cup plain Greek yogurt
-1/3 cup grated parmesan cheese
-1/4 cup fresh basil, roughly chopped
-Pepper, to taste

✨Instructions:
-Heat 1 tbsp olive oil in a skillet over medium heat and add thinly sliced Italian Beef Chomps to pan. Season with s/p and sauté ~5 minutes, until crispy. Remove and transfer to a bowl.
-Add 1/4 cup olive oil to the skillet over medium heat. Once oil is simmering, add the garlic and shallot and cook ~5 minutes, until carmelized.
-Add tomato paste and red pepper flakes, reduce heat to low, and cook ~5 minutes until thickened.
-Add in vodka and cook, stirring constantly, until liquid is evaporated, about 2 minutes.
-Add the Greek yogurt, parmesan cheese, basil, and pepper. Stir until all combined and keep warm over low heat.
-In a separate pot, bring salted water to a boil and cook pasta according to package instructions, until al dente. Before draining pasta, remove 1 cup of pasta cooking water. Then drain pasta.
-Add cooked pasta and Chomps slices to vodka sauce and toss to combine. If needed, thin the sauce with the reserved pasta cooking water.
-Garnish with fresh basil and parmesan cheese, and enjoy!

These shredded chicken quesadillas have been on dinner repeat all week!🔁 I love prepping a big batch of this Mexican seasoned chicken and having it on hand to use in recipes throughout the week. These ‘dillas are my fav because they are so simple and quick to make, plus the taste is incredible 👌🏻

✨SHREDDED CHICKEN:
-1 lb organic chicken breast
-1 tbsp olive oil
-1.5 tsp cumin
-1 tsp chili powder
-0.5 tsp garlic powder
-0.5 tsp salt
Tenderize chicken breasts and place in baking safe dish. Drizzle olive oil on both sides. Mix together spices and coat both sides of chicken. Bake at 375F for 25 minutes. Remove from oven and use 2 forks to finely shred chicken.

✨QUESADILLAS:
-Shredded chicken
-Almond flour tortillas (i used )
-Mexican style shredded cheese (i used )
-Toppings: salsa, smashed avocado, cilantro, fresh lime juice

✨INSTRUCTIONS:
-Place a tortilla on heated skillet, let brown for ~30 sec and flip over
-Layer cheese, then chicken, then salsa, and more cheese evenly over 1/2 of tortilla
-Flip the uncovered 1/2 of tortilla on top and press together firmly
-Let each side cook ~1-2 min until golden brown
-Remove from skillet, slice in half, and serve with desired toppings 🎊

-Stir together all ingredients (except chocolate chips and sprinkles) in a large bowl until dough is smooth and well combined
-Stir in chocolate chips and sprinkles
-Use a cookie dough scoop or roll into 1.5 Tbsp balls and store in fridge (makes ~13 balls)
