5 useful tips to help improve your baking 📝🤝🏾👩🏾‍🍳

1. DON’T OVER-MIX
It’s so tempting to just keep mixing and mixing your batter but this is going to ruin the texture of your bake. Mix JUST until you can’t see the flour/ dry ingredients anymore.

2. DIY MUFFIN CASES
You can make your own bakery style muffin cases with baking paper. Saves money, looks great and is easy to do!

3. ROOM TEMP EGGS
Room temperature eggs actually make a difference, they combine your wet ingredients better and give you lighter/fluffier cakes and breads.

4. SCALES ARE A MUST
Too much or too little of any ingredient can make or break your bake, get scales! They will make baking so much easier and more successful.

5. MUFFIN TRAY
Using every other well in your muffin tray will help your muffins rise/spread better, giving you tall bakery style muffins.

The only date cake recipe you need 😮‍💨⬇️

I’ve made this multiple times now and honestly think the recipe is perfect 😭🥹🙂‍↔️ it’s soft, moist & the perfect sweetness - honestly delicious every time!!!

WHAT YOU NEED ⬇️
15 medjool dates 
1 cup of milk (any milk, can also use water)
1 tsp of baking soda
100g of unsalted butter room temp
100g of brown sugar (for refined sugar free swap for coconut sugar) 
2 large eggs room temp
180g all purpose flour 
1 tsp cinnamon
1/2 tsp salt
1 tsp baking powder
1 tsp vanilla extract

WHAT YOU NEED STICKY SAUCE ⬇️
60g unsalted butter
60ml maple syrup
60ml heavy cream (or coconut cream for vegan)
1 tsp vanilla extract
1/4 tsp salt

HOW TO MAKE ⬇️
Take pits out your dates and soak in 1 cup of boiling milk and a teaspoon of baking soda (I do milk as gives nice creamy flavour but you can also use water). Soak for 30mins.

Pre heat oven at 170. Whisk your room temp butter till fluffy, then add your sugar, two room temp eggs (1 at a time), vanilla and whisk well.

Pour your soaked dates/milk into a blender and blend into a paste or you can just mash into a smooth paste manually. Pour date paste into your bowl with the other wet ingredients and mix well till combined.

Then add your flour, cinnamon, salt, baking powder. Mix till just combined, DO NOT OVER MIX.

Pour into a lined cake tin, I use a 8inch round one but you can pour into any baking dish of similar size/loaf pan.

Put into your preheated oven for 30-45mins.

Whilst your cake is baking, make your sauce! (Alternatively you can just use a store bought toffee/caramel sauce)

In a pot on medium heat add butter and melt down, then add your maple syrup and mix together. Lower to a simmer and add thick cream, continuously mix till combined. Add salt and vanilla, once you have a thickish/pourable sauce it’s done.

ENJOYYYYY 👩🏾‍🍳🤎✨

EXTRA TIP:
When you take your cake out poke it everywhere with a toothpick/chopstick so you get loads of little holes, then pour some of your sauce on it immediately so it gets all into your cake 😮‍💨 leave to cool fully then add the rest of your sauce on top.

super easy bread rolls, just 4 ingredients 🍞⬇️

after playing around with loads of quick bread recipes, THIS is the one! Easy, quick and makes the most fluffy, soft bread rolls 😍

YOU NEED ⬇️
3 cups self raising flour
2 cups kefir or greek yogurt
1 egg (for egg wash)
1/3 cup milk

HOW TO ⬇️
pre heat oven at 180

mix flour (add salt to your flour if desired) & yogurt/kefir until a stickyish dough

put a little flour on your countertop and hands as this dough is sticky, slightly flatten the dough then cut into even triangles/sections

roll each section into a ball and place in your tray lined with baking paper

mix one egg yolk and brush onto the tops sides of each roll, you can also sprinkle sesame seeds or any topping of your choosing here also if you wish!

Bake for 20-25mins and leave to cool 5/10mins before cutting.

Thats it! Enjoy your homemade bread without a thousand ingredients LOL 😵‍💫👩🏾‍🍳🍞✨

If we moved from the UK to Doha all over again, I would do these 4 things differently:

🇶🇦 I would visit first!
When we moved we knew nothing about Qatar, we had never even been to this side of the world - not even Dubai! So it was a massive leap of faith and thankfully one that paid off and has made our journey what it is. But before making the move I would have loved to visit, get a feel for life here and know exactly what we were walking into.

👥 Find/follow expat community pages
Moving is scary and can also be really lonely until you find your people/community. Thankfully I play a sport so that helped me meet people straight away, but outside of that I would have followed expat community/embassy pages like and for support & information about life here in Doha and advice on how to meet people etc. As well as following fellow expat pages, so I could really get an insight into what every day life actually looks like.

🧳 I would bring less stuff
I hardly wear any of the clothes I brought from the UK or use any of the stuff we brought over. You can pretty much get everything you need here, including a fully furnished apartment. So you really don’t need to bring much stuff!! If I did it again, i’d bring more of the little things that I love from home but can’t get here easily, like Barons pepper sauce and boxes of Yorkshire tea 😂

🏠 Research areas to live
Everywhere in Doha is a short drive away, but there are big differences in areas and apartments that can vastly impact your living experience. For example do you want an area with lots of other expats, do you want to a walkable area, what style apartment do you want - the list goes on! I definitely would have researched areas better through pages like and to get a real idea of where to live and what is cost. As well as pages like to find out how people REALLY feel about each area! *disclaimer: where you live will vary based on your job/offer/package so take this into account too*
