🐰Tip of the day: stuff your leftovers in a bun. One thing I like to do is work leftovers into something new. Since it’s still cold outside I remade the sauerkraut gochujang stew I’ve shared earlier. After eating it twice with rice it was time to have it with something else, Nijntje (Miffy) steamed buns! I mixed some vegan cheese through the sauerkraut and used it to fill the buns. Next time I’ll either leave out the vegan cheese or steam a bit longer for it to fully melt. Next time I’ll show you another way to reuse leftover foods, there are plenty!

Ingredients dough:
215 ml warm oat milk
380 gram flour
2 tbsp sugar
1 pack yeast
1 tsp salt
2 tbsp vegan butter

Directions:
Mix the dough to form a smooth ball. Cover and place in a warm spot to allow the dough to rise. Since I had the oven on I placed it next to the oven, taking me about 1 hour to double the dough in size. The time you’ll need to double the dough in size depends on the temperature so keep an eye on it.
Once doubled in size you can divide it in 6 balls. Flatten the ball using a rolling pin and then work your way around the edges flattening them while leaving the centre about double thicker. You want the centre to be at least double the size of the edges.
Place the filling in the middle of the dough and close pinching the dough together. Place on a piece of parchment paper and steam for about 15 minutes and let rest for about 5 before removing from the steamer. Enjoy <3

It’s been 5 years since I’ve started making cookbooks, so I thought it’d be a good time to highlight some of my favourite recipes and shots 🫶🏽

1. Miso glazed donuts, these were fun to shoot and make. I don’t have a big sweet tooth but every now and then I crave a good donut. In the book I also share how to get all these colours using natural ingredients.

2. Homemade vegan umeboshi mayo. I’ve tested a few recipes for flavoured mayo and this combination ended up being the most fun. The pickled plum adds a mouthwatering sour and umami layer to an already perfect condiment.

3. Saffron pickled lotus roots. Using saffron I received as a gift from (one of the best chefs I’ve ever got the pleasure to cook with) created a perfect condiment to most dishes.

4. Eggplant rolls with a gochujang glaze. These rolls teach you that good things take time. You’ll spend some time in the kitchen but you’ll leave with a reward!

5. My rendition of a #vegan macaroni & cheese. Basically a cheesy pasta which ended up being a crowd pleaser and recipe I’ve revisited over and over again.

6. Yaki onigiri. These grilled rice balls are packed with aonori (seaweed) and other flavours that pack a punch. The crispy exterior and soft exterior make for a perfect snack to get you energised throughout the day or side dish to for example accompany your favourite vegetables.

7. Easy chocolate mousse with some special ingredients. This is one of those desserts that that’s almost zero effort but everyone enjoys. Win win!

8. Pom. Easily one of my favourite dishes in the world. It’s a Surinamese food we enjoy during festivities such as birthdays and holidays. I could fill a few pages talking about this dish alone. You know what, maybe I should make a recipe video highlighting Pom soon.

9. Brown beans and plantain. Inspired by traditional Surinamese brown beans and rice I created this comforting dish. Not at all traditional but created with the same passion and respect as your classic beans and rice. It’s delicious I promise hehe.

10. Bami 👅 the dish I probably make the most. I’ve made this so often that it takes me about 30 minutes to whip up a big pot of bami.
Today I’ve got a very quick and simple recipe. You can play around by adding some protein or extra vegetables. Although I love spending a lot of time in the kitchen, some days I just want to have a quick dinner so I can rest a bit. Extra comfort gained by the clown on my back.

Ingredients:
3 bell peppers, sliced
1 onion, sliced
1 garlic bulb, sliced
1 chili pepper, sliced
¼ tsp fenugreek
1 tsp cumin seeds
2 tbsp tomato puree
1 tsp salt
1 tsp pepper
20 grams parsley

Directions
1. Warm a pan over low heat, add about 2 tbsp of olive oil and saute the onion, bell pepper and chili pepper for about 15 minutes or until the bell pepper becomes soft. Add the black pepper, fenugreek, cumin seeds and salt, cook while stirring for another 2 minutes.
2. Add the garlic and tomato puree and stir for another 3 to 5 minutes before adding about 300ml of water. Keep simmering and tasting until you’re happy with the sauce, add the parsley and mix in your pasta of choice. I added extra calabrian peperoncino to add an extra bit of heat. Enjoy ❤️

Another recipe inspired by Pokémon cards. Since I can’t celebrate my bday this year we’ll just push out another recipe while I’m glued to my bed with a nasty flu. Well make some yummy easy recipes next 💚

Ingredients dough:
380 gram flour
180 ml warm water (about 40 celsius)
2 tbsp sugar
1 pack yeast
¼ tsp salt
1 tbsp oil
1 tsp tomato puree + 1 tsp

Ingredients filling:
3 gala apples
1 red onion
1 bulb garlic
1 adjuma pepper (scotch bonnet)
250 grams vegan beef
2 tbsp soy sauce
2 tbsp hoisin sauce
1 tsp msg
½ tsp salt
½ tsp szechuan peppercorns
1 tsp black pepper
1 tbsp tomato puree

Directions:
1. Add sugar and yeast to warm water and let it bloom for about 5 minutes. Add it all to a bowl of flour, salt, oil and 1 tsp tomato puree and mix well. Knead until you get a smooth dough. Take about ⅕ of the dough and mix in more tomato puree until you get a tan orange dough. Cover both doughs and let them rest for about an hour or until they’ve doubled in size.
2. To make the filling add about a tbsp or two of oil to a pan and saute the onion, apples and black pepper on medium/low heat for about 10 minutes before adding the vegan ground beef, garlic, adjuma, soy sauce, tomato puree, msg, salt and szechuan peppercorns stir over medium heat for about 5 minutes. Add the hoisin sauce and stir until most of the moisture has evaporated and you get a workable filling. Let it cool.
3. Once the dough has doubled you can separate the white dough into 6 pieces. Roll out using a rolling pin, leaving the centre a bit thicker than the edges. Add the filling to the centre and pinch to close. Roll a bit of the orange dough into a thin layer that when held against the light shows your hands through the dough. Place on top of the filled dough ball and pinch to close.
4. Optionally brush a mixture of 50/50 tomato puree and agave on top of the dough before steaming and adding eyes using flat green beans.
5. Place on a piece of parchment paper and add to a steaming basket. Steam for about 15 minutes and enjoy!
