In an effort to utilize the large amount of #chickpeas in my pantry, I surprised #theboyfriend with his first #vegetarian meal! Mexican rice and chickpea stuffed #butternutsquash with a sprinkle of taco seasoned cheese on top! My meat-loving bf was surprised it could taste so good without the meat! #hippyhomemaker
*I cooked brown rice with a can of roasted diced tomatoes, vegetable broth, sautéed onions /garlic/Anaheim chili pepper, zest and juice of lime, taco seasoning
* baked the butternut squash halves in the oven seasoned with avocado oil and taco seasoning
*scoop the cooked butternut squash enough to be able to stuff it, set aside
*added garbonzo beans and the scooped butternut squash to the Mexican rice and then stuffed the squashes with the entire mixture
*topped with taco seasoned cheese and baked in the oven!
