15-minute quinoa salad that’s filling, fresh, and easy enough for real life!
Throw this all in a bowl and call it lunch (great for meal prepping too)
In the bowl:
• 1 cup cooked quinoa
• 1 cup chopped cucumber
• ½ cup chopped parsley
• ½ cup chopped mint
• ⅓ cup chopped red onion
• 1 can chickpeas, drained
• ½ cup crumbled feta
Optional - chopped pistachios, cranberries
Pour on top:
• Juice of 2 lemons
• ¼ cup olive oil
• Salt + pepper
Toss it. Taste it. Adjust if needed.
Eat it or let it sit in the fridge and get even better.
This is one of those recipes that looks boring on paper but somehow always hits.

• Salt, to taste
How to make it:
Blend everything except the chocolate chips until smooth and thick.
Stir in the chips.
Grab a spoon.

Preheat oven to 375°F.
Blend 12 eggs, 1 zucchini, 1 cup cheese, salt, pepper, and any herbs you like.
Pour into greased muffin tins, add extra toppings if you want, and bake 20–25 minutes.
We usually do 2–4 per serving and call it a win.
I used my blender because it blends everything smooth (aka no visible veggie evidence 👀) and the self-clean mode is a lifesaver.

🍕 Savory Pepperoni Focaccia-Style Pizza
You’ll Need:
9x9 pan
12 frozen Dinner Rolls
Cooking spray
½ cup pizza sauce
1 cup shredded mozzarella
10–15 slices pepperoni
Optional: extra veggies and oregano or basil
Steps:
Prep + Rise: Spray 9x9 pan, arrange rolls, cover with sprayed plastic wrap. Let rise 3–5 hrs until doubled.
Assemble: Press dough to dimple. Top with sauce, cheese, and pepperoni. Add veggies and herbs if using.
Bake: Bake at 350°F for 14 minutes, rotate pan, then bake another 8–14 minutes until golden and lightly browned on bottom.
Finish: Cool 3–5 min, garnish with basil if desired.
