Method

1 Heat the oil in a large saucepan with a tight-fitting lid over a medium heat. Add the popcorn kernels and toss to coat in the oil. Cover with the lid and cook until the first kernels begin to pop, then reduce the heat to medium-low. Shake the pan frequently until the popping slows and eventually stops. Remove from the heat.

2 For the Tajín popcorn, tip one-third of the popcorn into a large bowl. Mix together the nutritional yeast, Tajín, garlic powder, oilve oil and a pinch of sea salt, then toss through the warm popcorn until evenly coated.

3 For the dukkah crunch popcorn, tip another third of the popcorn into a bowl. If the dukkah is very chunky, crush slightly using your fingers or a pestle and mortar. Add to the popcorn with a pinch of flaky salt and toss well. Drizzle over the honey and toss again quickly to coat.

4 For the cinnamon tahini maple popcorn, mix the tahini, maple syrup, cinnamon and a pinch of salt in a small bowl. Microwave for 10 secs or warm briefly until loosened slightly. Toss with the remaining popcorn until evenly coated, then finish with an extra pinch of cinnamon. Serve warm or cooled.

200g dark chocolate, chopped

6 soft Medjool dates, chopped

2 tbsp almond butter

40g pecans, chopped

Method
Step 1
Melt the chocolate in short bursts in the microwave, stirring every 20 seconds until smooth. Spoon onto a parchment-lined tray or board and spread into a thin layer, roughly 35 x 20cm.

Step 2
Mix the dates, almond butter, maple syrup and vanilla in a bowl, mashing slightly until sticky and chunky. Spoon small amounts of the mixture over the melted chocolate. Scatter over the pecans, chia seeds and a pinch of flaky salt.
