Give me air-fried chicken, noodles tossed in a good sauce, and some chopped brussel sprouts and I’m happy. It’s simple, balanced, and actually something I look forward to eating.
RECIPE:
Spicy Soba Meal Prep Bowls
INGREDIENTS (4–5 servings):
Chicken breasts, pork belly, soba noodles, brussel sprouts (shredded), cucumber (sliced), eggs
SAUCE:
Soy sauce, chili paste (or sriracha), honey, rice vinegar, sesame oil, garlic
INSTRUCTIONS:
1. Air fry chicken at 375°F for 14–18 min per slice. Adjust cooking times based on how much chicken is in your air fryer!
2. Pan-fry pork belly until crispy.
3. Soft boil eggs 6–7 min, peel & halve.
4. Cook soba, rinse cold, toss with a little sesame oil.
5. Whisk sauce.
6. Assemble: noodles + chicken + pork belly + veg + egg + drizzle sauce.

The day before my first surgery, my anxiety was through the roof - I needed a sleep aid just to calm my nerves. Between the two procedures, a significant amount of tissue and fat was removed - more than I think I had fully wrapped my head around at the time. It wasn’t just physical weight, either. There was a mental and emotional weight tied up in it, too.
And, along the way, I learned a few things:
• You can be 100% sure and still feel scared. Both can exist at the same time.
• Recovery is not linear and patience isn’t optional - it’s required.
• The relief is immediate in some ways and gradual in others.
• What you think you’ll care about (size, shape, scars) may shift completely once you feel better in your body.
• I spent years adapting to discomfort without realizing how much it was costing me.

I’m Kasia and Calum is here, too, although he prefers to fly under the radar. I started this account with zero expectations and one specific goal: to share our build journey as honestly and realistically as possible.
