Cook pasta per package instructions, make sure not to overcook chickpea pasta otherwise it’ll be mushy! In a saucepan, add the onion and garlic and sauté in olive oil. Add in the mushrooms and sauté until soft about 7 minutes. Add in the spinach and cover until wilted. Add the coconut milk and then the pasta and mix well!

2 cups spinach
1/2 cup coconut milk
1/4 cup tomato paste
2 garlic cloves, minced

1 15 oz can chickpeas, drained & rinsed (optional)
Crushed red pepper flakes
Directions:
Cook pasta per package instructions, make sure not to overcook chickpea pasta otherwise it’ll be mushy! In a saucepan, add the onion and garlic and sauté in olive oil. Add in the tomatoes and sauté until soft about 10 minutes. Add in the spinach and cover until wilted. Add the coconut milk and tomato paste. Once pasta is done, add to the tomato mixture and mix well!

Brushetta chicken over spaghetti!
Ingredients:
2 chicken breasts (rubbed with chili powder, salt & pepper)
1 box spaghetti
3 large tomatoes
1 red onion, chopped
3 garlic cloves, minced
2 tbsp olive oil
4 tbsp fresh lemon juice
1/3 cup Parmesan cheese
Fresh basil, roughly chopped
Crushed red pepper flakes
Onion powder
Garlic powder
Balsamic glaze for the drizzle
Salt & pepper
Parsley
Directions:
Using a large pot of salted water, cook spaghetti per box instructions. While pasta is cooking, rub chicken breasts with chili powder, salt & pepper and throw on the grill until cooked through. In a small bowl, add the tomatoes, red onion, basil, lemon juice, olive oil, Parmesan cheese, onion powder, garlic powder, crushed red pepper flakes, garlic cloves, dried parsley, salt & pepper, mix well. Once pasta is done, drain and add to each plate, top with the grilled chicken and then add the brushetta on top of the chicken, drizzle with balsamic glaze!

Air fryer chili-lime mango chicken!
Ingredients:
2 chicken breasts
1 white onion
2 tbsp olive oil
2 mangos, one for the marinade + one for garnish
2 tbsp Chili sauce (I used sriracha)
2 tbsp Honey
1 tbsp orange juice
1 tbsp Apple cider vinegar
Crushed pepper flakes
Sticky rice to serve with
Salt & pepper
Parsley
Directions:
Using a blender, blend together 1 mango, apple cider vinegar, orange juice, olive oil, chili sauce, honey and white onion. Place the chicken in a zip lock bag or Tupperware and pour marinade over chicken, marinade for at least 30 minutes. Preheat air fryer to 400°, line a baking sheet with aluminum foil and place chicken on top, place in air fryer for about 25 minutes. Serve over right with extra mango, parsley & crushed red pepper!
