Easy oven dumpling soup 🍜🥟

When my baby’s in bed, I want something quick, and full of flavour — without loads of washing up. This oven-baked dumpling soup is that! So comforting, so easy. You could even prep it in the morning, then just add the gyozas before you bake it.

⏲️ Bonus: you’ve got time to bath your baby and get them to bed while it’s bubbling away in the oven 👏🏼

Here’s how to make it:

Preheat oven to Gas Mark 6 / 200°C / 400°F

In a roasting tin, whisk together:
• 1 can coconut milk
• 2 tbsp Thai red curry paste
• 1 tbsp sesame oil
• 1 tbsp soy sauce
• 1 tbsp rice vinegar
• 1 tbsp minced ginger
• 2 garlic cloves, crushed

Add:
• 1 sliced pak choi

Top with:
• Frozen dumplings (I used veg gyozas)

Bake for 25 mins, until the dumplings are hot and the sauce is bubbling.

Top with chilli oil, coriander, lime juice, and sesame seeds 🌶️🌿

💡 You can add noodles too — just make sure there’s enough liquid to cook them in.

Recipe review - herby halloumi with dilly rice and tzatziki ✨🤩

Mob have loads of new lunchbox recipes on their site and I’ve tried a few now. This is by far one of my favourites! It had such a nice flavour from the sticky halloumi, dill rice and the tzatziki. It would be a 10/10 lunchbox but I made this for tea.

I needed to make the recipe even quicker so I used microwave rice (missed out the orzo), and I just stirred the dill and butter into the rice. I also missed out the nigella seeds and just used already ground coriander and chilli powder. It was amazing even with these changes so I’d definitely recommend giving it a try. Mob is my go to for recipes at the minute!

Monday meal prep… sumac chicken with quinoa, courgette, and garlicky tahini 🧄🍋

On a mission to make lunches I will actually look forward to eating all week and this was that! So delicious, each part of it was easy to make and only 488 calories! On a mission to be healthier and making this has spurred me on to meal prep more next week - hopefully it will be as good as this one! 😋

Ingredients (for 5 portions)
* 500g skinless and boneless chicken thighs
* 2 tbsp sumac
* 1 tbsp garlic granules
* 2 tsp honey
* 1 tbsp olive oil (for the chicken) and 1 tbsp olive oil (for the courgette)
* 2-3 courgettes
* 150g uncooked quinoa or 400g cooked quinoa
* 50g tahini
* 1 large garlic clove
* Juice of 1 lemon
* 50g feta

Method…
* Marinate the chicken in the olive oil, sumac and garlic granules. Heat a pan until hot and fry on both sides turning regularly until cooked through and golden. Drizzle over the honey once cooked.
* Sliced the courgettes lengthways, I got 4 slices from 1 courgette. Then coat in the olive oil and seasoning, and fry in a hot pan until starting to char.
* Cook the quinoa with veg stock (low simmer for approx 20 mins).
* Mix the tahini with lemon juice, crushed garlic and salt, adding water until desired consistency.
* When the chicken, courgettes and quinoa are cooked, you can put these into containers in the fridge or you can divide between separate containers now. I portioned mine out and added the feta at the end with the tahini dressing. Don’t add these if you want to heat it up first.

Easter brunch was an easy one for us. The spinach & herb buttermilk pancakes, with wilted garlic spinach, fried eggs and streaky bacon. We also added the M&S pre made hollandaise sauce after to top it all off. So good, can always rely on M&S for the best ingredients for a quick assembly brunch!

The best thing I’ve made in a long time… crispy beef in a sticky chilli sauce with cucumber salad 🥒🌶️🥭😍 I’m making this again next week and I rarely make the same thing twice so that says it all 😂

Slice your beef thinly and coat it in egg, then in cornflour and fry in hot oil until crispy. Then put on some kitchen paper. Make your sauce - I used mango sweet chilli sauce and added tomato ketchup, soy sauce, garlic, ginger, lime. Add your beef back to a pan with the sauce and cook until sticky and coated. The cucumber salad is thinly sliced cucumber and spring onion with lime juice, sugar and salt. So delicious!

Spicy cheesy chicken and chorizo 😍

This is inspired by a recipe I made a while back but I changed it slightly to use what I already had in and so hit a certain amount of protein and calories.

Honestly, this was so good. Really easy to make so perfect midweek but had loads of flavour. This will be on repeat!

To serve 2 people, this is a rough recipe…
Bash 2 chicken breasts until flat, then rub all over with some low cal cooking spray and cajun seasoning. Fry in a hot pan, turning regularly until cooked. In another pan, add 1 diced onion, a little more cajun seasoning and 50g chorizo (diced) and fry with some low cal cooking spray for 5-10 minutes, add 20g of chopped sundried tomatoes and plenty of spinach then cook until the spinach has nearly wilted. Then add your chicken breasts back into the pan with 100ml chicken stock, then let it simmer for up to 5 minutes. Stir in 60g of garlic and herb intense philadelphia, some chilli flakes and season with pepper, and it’s finished! I added a squeeze of lemon on top too ☺️ (575 kcal)

Chicken and plum stir fry with pak choi, noodles and peanuts 🥜🍜🌶️

This is another recipe that I loved last week. So easy to make and all in one pan, not many ingredients, and healthy so a winner. I love any fruit in food, and the sweetness of the plums with the chilli and the sticky sauce was delicious. I’ll definitely make this one again! ☺️

Tandoori spiced halloumi steaks, with chips, curry sauce, mango chutney and the best cucumber mint salad 😍

I wanted to get for ease last week and this was by far my favourite recipe. The salad was so good -, pickled red onion, mint and rocket 🥒🪴 but the curry sauce was so good too and really easy to make. Overall, the recipe was a bit faffy for a weekday (for me) but it was definitely worth it. It would work so well with tofu or chicken too!

Peri peri chicken with ranch slaw 😍

This is a cheat meal using peri peri chicken and their slaw mix which comes with the veg, ranch dressing and croutons. I need easy and healthy dinners so this is ticking the boxes for me. It tasted so good too! I just added some extra chilli flakes to finish. Both of these would be good in a wrap or pitta too!

Lemon, pepper and parmesan chicken sandwich filler 😍🥪🍋

I’ve been loving this recently! High in protein, low in calories and so delicious.

This serves 2 people…
1 chicken breast and 2 slices of smoked streaky bacon pan fried with 1 tbsp olive oil. When the chicken is cooking, keep sprinkling over paprika, pepper and salt. Squeeze over lemon juice when it’s cooked and cut the bacon and chicken up. Add chopped red onion, lettuce, 50g greek yoghurt, and 30g parmesan. Add plenty more pepper to taste and lemon juice.

316 calories, 33.5g protein per serving.

Just add whatever bread or wrap you want! It would also be fab stirred through pasta or eaten on its own as a salad 😍
