Obviously being away with a beautiful woman in a beautiful place with beautiful surroundings and beautiful weather is magical, next comes food 😍. Oh my did I get to have a load of great dishes, and much fish and shellfish.
Had the best pork I've ever tasted at our hotel (Iberian Tbone Pork), fantastic moules mariniere and probably the best version of my favourite dish, spaghetti alla vongole, just to name a few. Some damn good drinks too.
The only disappointment for me and my first time having it was John Dory, not sure if it was the fish or the way it was cooked but that wasn't for me.

As well as being blessed with staying at the Caramelo Hotel, we were further blessed that within the grounds was this gem which is which had the most fantastic and silkiest gelato and the flavours were immense. The people were lovely and so friendly. Tried many flavours, all damn good, but favs were meringue & passion fruit and their Menorcan special. I have tried many varieties of pistachio gelato or ice cream over the past few years and never has it had the full flavour that I experienced here πŸ˜‹. We had at least one gelato every day, and my partner Claire only had the Vanilla had she said it was too good to try anything else 😁. If youre ever in the area, forget the others, go straight here 🀘. Another great memory for this amazing holiday together ❀️
Bloodstock is not just about the music, but about the great street food too, and me, and get to meet the creator of the best baked potato, great guy he is too, and, a lovely message to another fan, my step daughter 🀘

Haven't been on here for sometime as I've been on a low carb, no sugar diet, but will be back.
However, it's festival season and the most difficult on this diet is getting the right food, until I return to Bloodstock and. I've been coming for years and have never been able to have their Turkey Leg as they sell out so quick, until yesterday, last one left πŸ’ͺ, and OMG it was damn good, smoked for 16 hours and incredibly tasty. And you just feel like a viking eating it 😁🀘

I was damn full after it though πŸ™„πŸ€£. Well worth the money πŸ‘

SLOW COOKER CASSOULET πŸ‡«πŸ‡·

Needed something to come home to last night after a lovely walk with on Newton beach, Porthcawl.
Not the traditional way to make cassoulet but it was damn good πŸ‘Œ
Should have done Cawl this weekend as it was St Davids Day πŸ™„πŸ˜πŸ΄σ §σ ’σ ·σ ¬σ ³σ Ώ

2 pork chops
2 duck legs
20g butter
1 onion, finely chopped
7 slices of streaky bacon, chopped
2 cloves of garlic, finely chopped
400g tinned haricot beans, drained
300g smoked garlic sausage, sliced and quartered
750ml boiling water
1 tbsp tomato puree
Bouquet garni
2 bay leaves

Preheat the oven to 160c fan. Place the pork chops on a tray and place in the oven for 25 minutes.
At the same time, place the duck legs on a wire rack inside a baking tray. Dry the skin with paper towel then prick all over with a knife. Sprinkle with salt and place in the oven for 80 minutes.
When done, remove the pork chops and set aside to cool, then baste the duck. I then basted 30 minutes later also.
When done, remove from oven and set aside to cool.
I did the above the night before, so once cooled, I wrapped the pork and duck in cling film and left in the fridge overnight.

Preheated the pressure cooker on sautΓ© mode, on low. Add the butter and the onion and cook until softened. Add the bacon and cook until starting to brown. Add the garlic, stir well and cook for 2 minutes. Cancel the saute mode. Remove the pork and duck from the fridge and remove all the meat from bones and chop to bite size pieces and add to the pressure cooker. Add all the rest of the ingredients, stir well, place on the pressure cooker lid, set to slow cook on low and leave for 8 hours.
When done, season to taste and serve in bowls with baguettes and proper butter πŸ˜‹πŸ€˜
