常温ばかりだなあ。

ガラスドームに入れられて常温で一年中売られています。
寒い国なのもあるけれど、
冷蔵庫がない頃から作り続けられた菓子たちだから、と考えています。

ざっくりした食感のバターが香る昔ながらのスコーン。
ロンドンのスコーン
強力粉で作る今流行のふんわりしたタイプ。グレイズは全卵。
食べ比べてみると
全く違う魅力があります。
ブリティッシュプディングのスコーンたちは パン袋・ビニル袋に入っています。
それは1番美味しい状態を保てるから。
おしゃれな紙袋や耐油袋にしたいなと思うけど、そのまま翌日まで置くとスコーンが固くしまってしまうのです。
パン類はビニル袋で販売されているのと同じかな。
英国の店の職人さんは 「店には紙袋が無い。スコーンはビニル袋に入れる」と言っていました。
冷めて常温になったスコーンを店頭に並べると次々とお客様が来て、ビニル袋に入れられていく。エコが進む英国だけど、スコーンはビニル袋が多い。
良い状態でスコーンを持ち帰って頂きたい。ビニル袋に入れる理由です。
もし紙袋に入っていたらそれごとビニル袋に入れるといいかも。

スティッキートフィープディング♪
このお菓子はいろいろなタイプがあります。
トフィーソースをかけたものも知られるようになりました。
今回作るのはカットしてそのままおいしく手軽に食べてもらうもの。
天板を使って作るトレイベイクのスティッキートフィープディングです。
つまんでたべてほしい。
カットする際、はしっこ、すみっこ、が必ずでますが、それもそのままカップに入れています！
英国の友人は、そのコーナーのを頂戴！好きなのよ～と言っていました！こういうのいいな。
ローフのはしっこがすき。
ななめに焼き上がったスコーンに、こういうのがおいしいのよ！

エリザベスチョコレートビスケットケーキ
女王が好きだったといわれている菓子。
ビスケットをチョコレートで包み込むように作ります。さくさくとしたビスケットの食感が命のこの菓子なので、毎朝作っています。
ビスケットの砕きかたはそれぞれ。小さく砕くのと大きくするのと好みで分かれます。
ケーキとはいうこれど、チョコレートそのもの。
生クリームの量で固さが決まります。今回は古い配合で固めのビスケットケーキです。
チョコレートはカレボーのミルクとビター。

キャロットケーキ
大きなサイズなのは現地の味を再現したいから。
このサイズで焼くと
生地がふんわりしてくれます。
英国のティールームで、ガラスドームに入っています。冷蔵庫には入ってない。
クリームないの？
と言われます。チーズクリームのキャロットケーキおいしいですね。大好き。教室でも作っています♪
ただ英国の昔からの菓子が好きなので、この焼きっぱなしのキャロットケーキを店で作っています。
砕いたにんじんを感じる
胡桃とミックススパイスを感じる キャロットケーキ。
日本ではフロスティングありが主流の中、この地味なキャロットケーキをきっと愛してくれる人がたくさんいてくれるはず♪
と信じて作り続けています♪
キャロットケーキは常温で召し上がってほしいです。

女王が好きだったと言われるこのケーキは、ケーキと名がついているけれどチョコレートそのもの。
ビスケットが中に入っていてチョコレートで覆っています。
これにマシュマロが入ると
子供が大好きな
チョコレートビスケットバー。
日本で言う短冊にカットして食べます。マシュマロ入りの方が少し柔らかい仕上がり。
手で持って食べる菓子。
チョコレートビスケットケーキはフォークを縦に使って砕きながら食べる感じ。
今のものは、柔らかく仕上げたフランスのオペラ風なのもあるけれど、
今回作っているチョコレートビスケットケーキは昔ながらの配合。しっかり固いチョコレートビスケットケーキです。
