日本食がもっと身近になるきっかけを「だし」を通じて提供する。
京都祇園 茅乃舎は、
だしの文化を五感で体験できる新たな旗艦店です。
隈研吾氏設計の建築、
折敷や箸置き、箸、漆器椀、飯茶碗など、
職人技が光る器や工芸品が随所にちりばめられ、
京都の食材を活かしたお料理も楽しめます。

ふわりと広がるお出汁の香り。
思わず顔がほころぶような、
やさしく心地よい空間。
一階と二階で表情の異なる天井。
雅な空間と、やわらかな空間。
白木の格子から差し込むやわらかな光。
建築や工芸、食が美しく調和し、
店内を歩くだけでも心が満たされます🥰
見どころはたくさんありますが、
私の心に一番残ったのは、
茅乃舎の料理の原点についてのお話でした。

それだけやけど、「初夏」の食卓💠🐌
あとは、よくある食材と "炊いたん"
海老フライは衣付失敗して、タルタルで隠してある（笑）
私が子どもの頃、
お父さんのごはんには一品多くおかずが並んでいた。
父親が権威を保っていたのか、
妻が夫を奉っていたのか（笑）
そんな時代を通って、私は今に至る🙋🏻♀️
本日の夫の前に置いた鮎は、
そういう意味ではなくてꉂ🤭
「旬やし、食べさせてあげよかな😁」
ただそれだけで（笑）
食べさせてあげよ、って、

時代は変わっても
家族に旬のものを食べてもらいたい
根底に流れてる”なにか”は一緒なんやと思う😊

描きあげた豆皿のデビューは、
昨年作った梅酒で作る梅ゼリー💚
ひとつ食べただけで、
ほろ酔い気分🤭🥰

先日、実家の庭から持ち帰った紫陽花で
「紫陽花のおまもり」💙💜
朝から、一年間見守ってくれた昨年の紫陽花に
「ありがとう」を伝えて、新しい紫陽花と交換😊
6月の6がつく日
（6日・16日・26日）に、
紫陽花を半紙に包み、紅白の水引で結んでトイレに吊るして飾る。婦人病にかからない、下の病気で困らないなど。厄除けや幸運を願う「紫陽花のおまもり」🌿
梅に紫陽花。
どちらも去年から今年へとつながる
この季節の贈りもの✨
今年もこうしてこの季節を迎えられたことに感謝して

金魚の茶托は広島・宮島彫り🌿
ずっーーーっと前に義兄からいただいて、
当時の若い私にはあまり響かなかったけれど、
長い時を経て、私も手仕事の良さが染みてくる世代に入ってきた😊
本当にいいものの価値は、
人として少し熟成してからわかるものなのかもꉂ🤭

梅肉エキスは、青梅の果汁をじっくり煮詰めて作る昔ながらの保存食であり、家庭の健康食品として親しまれてきた貴重なもの。
材料は、まだ"かたい青梅"だけ。
青梅をすりおろして果汁を搾り、その果汁だけを（青梅１キロで）1時間ほど煮詰めていくと、少量の黒褐色のエキスができあがる。
でも！
これがまぁ、手間がかかる🤣
労力もいる😆 疲れる。覚悟もいる（笑）
しかも作れる時期は、一年のうちのほんの一瞬。
青梅の頃のみ。
よって🙈
ここ数年は「今年はちょっとパスしとこ…」
が続いていて、、
でも、、でも、、
そろそろ作らなあかんのちゃう？と、
自分自身からミッション発令が来て😂
今年は久しぶりに頑張りました-`🙌🏻´-
1kgの青梅からできる量はほんのわずか。
瓶に詰めた後の鍋肌に残ったエキスまで愛おしく感じるほど（笑）
最後はお湯を注いで溶かし、余すことなくいただきます😊
手間も時間もかかるけれど、その分ぎゅっと凝縮された梅の恵みは作ったものしか味わえない🫶🏻
わが家では、お腹の調子が気になる時や、なんとなく身体を整えたい時にほんの少し口にする、
すっぱーーー😖で身体がしゃんとする
お守りのような存在💚
長期保存ができるため、
このひと瓶が、これから数年、またわが家の守り神のような存在になってくれる🙏🏻 ̖́-
次に青梅と向き合うのは何年後でしょうꉂ 🤭
今年もまた、小さな瓶に詰まった梅の恵みができあがりました🌿
