The BEST homemade caramel sauce that you could ever make taken to the next level with miso for a little umami punch! It’s my go-to for coffee. I shake it with espresso and real milk for that smooth, milky finish that just feels good and comforting. It’s my little dairy moment for the day.
Ingredients:
2 cups cane sugar
2/3 cups water
3/4 cup heavy whipping cream
4 tbsp unsalted butter
1 tbsp white miso
1/8 tsp sea salt
2 shots espresso
¾ cup 2% milk
To make miso caramel: In a heavy-bottomed saucepan, combine the sugar and water over medium heat. Do not stir, instead swirl the pan gently to ensure even heating and prevent crystallization.
Bring to a boil: It will start to change color from clear to golden and then to amber. This process may take about 10-15 minutes. You can adjust the heat if necessary to prevent burning.
Once the caramel reaches a deep amber color, remove the pan from the heat. Carefully pour the heavy cream, be careful as the mixture will bubble up.
Next, add butter and whisk until completely melted and combined. Stir in the white miso paste and the salt. Mix until everything is incorporated evenly.
Let the caramel sauce cool for at least 30 minutes in the pan. Then, pour it into a heatproof jar or container. Allow it to cool to room temperature before sealing the container. It will thicken as it cools. Keep refrigerated for up to 2-3 weeks.
To make shaken espresso: add espresso, milk, 2 tbsp of caramel, and ice to a shaker. Shake vigorously for 45 seconds. Drizzle caramel on the edges of your glass, add ice, and pour the shaken espresso on top. Enjoy!

Because Valentine’s Day is around the corner and pies are always a good idea.
🎀Raspberry jam:
-1 cup raspberries (frozen or fresh)
-1 cup cane sugar
-3 tbsp lemon juice
Combine raspberries, cane sugar, and lemon juice in a saucepan over medium heat. Stir until the sugar dissolves and the raspberries break down. Let it simmer, stirring occasionally, until the jam has thickened and reached 220°F, about 10-15 minutes. If you don’t have a thermometer, use the plate test: drop a spoonful onto a cold plate from the freezer, wait a few seconds, then push it with your finger. If it wrinkles and holds its shape, it’s ready. If not, keep cooking and test again. The jam will thicken more as it cools. Store in a jar clean refrigerated for up to 2 weeks. Enjoy!

Can be found at in Osaka. They serve these fluffy egg sandos with whipped egg whites, egg salad, and an egg yolk drizzle for which people will line up. They’re basically an egg soufflé and they’re approved 🥚
In my opinion, the real star of the show is the Harami steak sando, made with 400gr of perfectly cooked tender skirt steak garnished with pink peppercorns. It’s the most expensive item on the menu at 2400¥ ~ $17 USD, but it’s so worth it! It’s a massive portion.
I recommend going on a weekday to avoid crowds and getting there early around 11am:) it’s a very small shop.
