『アプリコット』
・Apricot Cobbler アプリコット・コブラ―
・Ginger Syrup 新生姜のジンジャーシロップ
6月中旬頃から「アプリコット(あんず)」の季節が始まります。
期間は約1カ月ほどの短い初夏の味覚です。
今回は、イギリスやアメリカの家庭的なお菓子『コブラ―』を作ります。
アプリコットにスコーンやビスケットのような生地をのせて焼き上げた手軽なお菓子。
外側はサクサク、中はしっとりした生地とじっくり火が入ったアプリコットの甘酸っぱさがたまりません。
「クランブル」にも似ていますがもっと食べ応えがあります。
同じバラ科のラズベリーやブラックベリーも入れて香りのコントラストを加え、焼き立てをバニラアイスと共に頂きます。
もう1品、今が旬の新生姜を使ったピンク色のジンジャーシロップを作ります。
すりおろした生姜にレモンを加えると鮮やかなピンク色に変わるのが楽しく、ソーダで割ってこの時期だけの辛口ジンジャーエールを楽しめます。
デザートコースはアプリコットだけではなくバラ科のフルーツを使ったものをご用意しますのでお楽しみに。
※インセクトファームさんから 千葉の畑で採れた無農薬のアプリコットを届けて頂く予定です。

新生姜は高知産のものを使用予定です。
