Here at Sunny Farms we use a triple extraction method whereby we leave the Lion’s Mane in alcohol for a minimum of 8 weeks and then perform two hot water extractions.
This process aims to capture a broad spectrum of compounds, including both alcohol-soluble and water-soluble ones.

Just over a year ago we enlisted the help of all round legend, gardener, permaculturist and grower to help turn Mlkman’s old oat milk storage fridge just down the road in Hackney Wick, into a mushroom grow space to provide a farm to table experience for the restaurant, whilst obviously giving us another way to spend more time with fungi
It’s been a long and educational road
Since we started Sunny Farm Shrooms (named after Jamie’s son), with most of the mushrooms going into tinctures, but we’re over the moon to say that we now have fresh, home grown lions mane dishes on our menu
We’re kicking of with some Thai style, melt in the mouth, marinated skewers served with a cooling coriander chutney
Available from this evening. Due to the fruiting times of the mushrooms, when they’re gone they’re gone 🍄
And you know, whilst it was nice knowing that the milk was tasty and all that, no one ever said “MY MOOD & MOTIVATION WENT THE ROOF AS WELL MY PRODUCTIVITY AND COGNITIVE FUNCTION” after having it on their cornflakes 🧠
