Heute habe ich für euch einen richtig leckeren gerösteten Auberginen- und Spitzpaprika-Salat 😍
Perfekt als Beilage zum Grillen, als Meze oder einfach zum Fünf-Uhr-Tee. Wer Auberginen liebt, sollte dieses Rezept unbedingt ausprobieren – es ist wirklich unglaublich lecker geworden ✨
Zutaten:
• 2 große Auberginen
• 2 große rote Spitzpaprika
• 2 Tomaten
Für die Mischung:
• Einige Frühlingszwiebeln
• ¼ Bund Petersilie
• 1 TL Schwarzer Pfeffer
• 1 TL Paprikapulver
• 1 TL Chiliflocken
• 1 EL Salz
• ½ Teeglas Olivenöl
• Saft von 1 Zitrone
• 2 geriebene Knoblauchzehen
Zubereitung:
Die Auberginen, roten Spitzpaprika und Tomaten mit einem Messer leicht einschneiden und auf ein Backblech legen.
Im vorgeheizten Ofen bei 250 °C backen, bis das Gemüse weich und schön geröstet ist.
Das heiße Gemüse anschließend in einen geschlossenen Behälter geben und etwa 10 Minuten ruhen lassen. Danach schälen und klein hacken.
In eine große Schüssel geben. Frühlingszwiebeln und Petersilie fein schneiden und hinzufügen. Danach die Gewürze, Zitronensaft, Olivenöl und den Knoblauch dazugeben und alles gut vermengen.
