Let dough rest for 1 hour. Press 3/4 in a buttered tart pan, prick with a fork, top with the jam. Roll the rest of the dough, cut out shapes, place on top and bake at 350F/ 180C for 25-30 minutes.

A Canada Day picnic inspired by Canadian food, friendship, and the simple joy of gathering outdoors.

With our friends Margaret and Raymond, we packed up a Canadiana picnic, headed to Hawrelak Park, and spent the afternoon sharing great food and plenty of conversation around the table.

🍴 On the menu: popcorn, deviled eggs, bread and butter pickles, salmon sliders with candied maple bacon, creamy coleslaw, Nanaimo bars, and fresh strawberries.

The best part? Lingering a little longer, taking in the views, and ending the day with a walk through the park.

Blend Pecorino and pepper with a little tap water. Finish cooking the pasta in the pan you rendered the guanciale in. Then throw in the pot with the Pecorino paste and a touch of tempered pasta water. Sprinkle crispy guanciale on top.

📍The technique:
Only yolks.
Beat them with Pecorino, pepper, and the guanciale fat until they’re almost a zabaione. (The warm guanciale fat tempers the yolks 👍).
Mezze maniche go into the pan you crisped up the guanciale with a splash of their water.
Then the egg paste.
Stir off the heat until it turns glossy and creamy.
Finish with crispy guanciale on top.
