Makes about 16 cookies
Preheat oven to 350 convection fan on.
Unlike most cookie doughs, this one needs no rest between mixing and baking. Though you can let it rest between if you’d like.
-cream butter and sugar together
-add eggs
-continue creaming process until the three look whipped and airy
-add remaining ingredients and mix just until thoroughly combined
-scoop onto parchment lined baking sheets using 2” ice cream scoop I do 9 per sheet tray.
-let bake 5 min, then remove, flatten, and return to oven for 3 min
-remove from oven and let cool before frosting

1lb pasta
1 can tomatoes
1 lemon, zested, cut in half
2 shallots, diced
1 bunch parsley, chopped
5-6 anchovy filets
8 garlic cloves, minced
2-3 Tablespoons EVOO
1Tablespoon Calabrian chiles
1 teaspoon Italian seasoning
Salt
Pepper
-before you start the sauce, bring a pot to boil for your pasta. The sauce comes together almost instantly
-over medium flame, heat pan and add oil. About a minute later, add shallots and let cook for about 2 min, add anchovies and begin breaking up with spoon. Once they’ve mostly dissolved into the shallots, add Italian seasoning. Then add tomatoes, a little lemon zest, and half the juice.
-let the sauce simmer a bit and then add 4/5 of the garlic and the Calabrian peppers.
-once pasta is cooked al dente and ready to go in the sauce, reduce flame to low. Add pasta and then immediately the remaining garlic, parsley, a bit more lemon zest, and juice of remaining lemon half. A touch more salt and maybe a bit more evoo. Let cook together about 1 min before turning heat off and leaving covered in pan about 3-5 min. Mix again before serving.

Recipe:
6 chicken thighs
1 head cabbage
3 lb carrots
2 lb potatoes
1 onion
8 garlic cloves
1 bunch parsley, chopped.
2t soy low sodium soy sauce
4t ground mustard
4t onion powder
3t garlic powder
2t ground pepper
1/2t smoked paprika
1/4t cayenne pepper
Diamond kosher salt
First a note, I use Diamond Crystal Kosher salt. It is much less salty than say Morton’s kosher salt, therefore I use more Diamond. If you use a salt other than Diamond Crystal Kosher, I’d half the salt and then salt to taste.
-Toss chicken thighs in 2 Tablespoons salt, cover and refrigerate overnight or 24 hours.
-Season salted chicken with 1 teaspoon low sodium soy sauce, salt, 2 teaspoons ground mustard, 2 teaspoons onion powder, 2 teaspoons dried thyme, 1.5 teaspoons garlic powder, 1 teaspoon ground black pepper, dash smoked paprika, 1/4 teaspoon cayenne. Set aside.
-chop vegetables so carrots, potatoes, and mushrooms are approximately the same size. Cut cabbage thinner so it will caramelize instead of stew, add two garlic cloves cut in half. Combine with remaining seasonings and soy sauce and about a tablespoon of olive oil. Mix until well combined, lay out on a large sheet pan and nestle chicken thighs amid veg.
-Roast all together on baking sheet at 375 for 90 min.
-stir in chopped parsley and minced garlic once removed from oven, check salt and pepper, and serve
