Weeknights can be so stressful and there’s so many nights when you find yourself staring in the refrigerator looking at chicken breast and trying to decide what to make!
Chicken Piccata
2 chicken breast split
Seasoned with salt/pepper
2 Tbsp butter
1/2 C Almond Flour
1/4 C Arrowroot Flour
1 Cup Chicken Broth
1 Tbsp Minced Garlic
2 Tbsp Capers drained
3 Tbsp Lemon juice
Dredge split chicken in almond flour/arrowroot mix. Place 2 Tbsp butter in pan over medium heat. Once melted add chicken, cook for about 3-4 minutes per side. I recommend using a meat thermometer.
Once it’s cooked, remove the chicken and set aside.
Pour in chicken broth and scrape the pan with spatula or wooden spoon. Then add lemon juice and garlic. Cook for about 1-2 minutes then add capers.
Add chicken back to pan and simmer on low for about 5 minutes.
Serve over noodles or arugula.

1 ½ cups light-tasting olive oil avocado oil 2 eggs 1 teaspoon mustard powder 2 cloves garlic peeled and smashed Fresh ground pepper 2 tablespoons fresh lemon juice 1 tablespoon vinegar white or apple cider ⅓ cup fresh parsley 2-3 tablespoons fresh dill ½ teaspoon onion powder ½ teaspoon garlic powder ¼ teaspoon paprika ¼-¾ cup almond milk 1 teaspoon salt
1. Add all your ingredients, except the herbs and almond milk. Mix with an immersion blender.
2. Once everything is emulsified, add your herbs. Blend with immersion blender. Add 1/4 cup of almond milk or more until your desired thinness.
3. Store in an air tight container in the refrigerator for 7 to 10 days.
