Still here! I love assembling lasagna and I find it very relaxing. You have done the work and it’s a matter of layering and assembling - What could go wrong?!

Ingredients:
- whatever veggies you find in your fridge ( mushrooms, celery, carrots, broccoli, courgette,…etc)
- 1 kg beef mince
- 1 bouquet garni
- oregano and basil
- splashes of Worcestershire sauce
- a dash of balsamic vinegar
- 2 tablespoons tomato paste
- 2 cups tomato puree/ passata
- salt & pepper
- béchamel sauce ( I use now the instant packs )
- buffalo mozzarella cheese
- grated mozzarella and cheddar cheese
- grated nutmeg

Bake for about 40 mins at 190 deg.

I was asked to write this recipe by, the famous Batata Harrah! And although i regularly order it in #lebaneserestaurants as a family favourite warm mezze, I realised I never really attempted to make it home in spite of the fact that it would fit many of our meals.

So thank you for the nudge, I proudly nailed it and made a very light version of this beloved #middleeastern side or appetiser.

🫶🎊 Finally had the opportunity to enjoy a beautiful zero-waste lunch at 's home on Saturday afternoon. Sohini is a great Bengali chef who many of the community at loved hearing from at our Storytelling Event for International Women's Day Celebrations in March along with and

🫶🫶 Earlier in the week Women In The Food Industry co-founder got to sample Sohini's zero-waste canapés at a lovely event hosted by so it was an extra special treat to have weekend vegetarian lunch where Sohini and her husband Rhjul normally run their evening supper clubs.

🫶🫶 Sohini & Rhjul explained that much Bengali food is naturally zero-waste and is not down to chasing trends. The plantain peel chutney was particularly delicious and we loved that every part of this fruit was used.

Here's the full menu

1) Daal puri, aam ras (mango puree), and mint bhel chutney

2) Lettuce cups with jhalmuri

3) Purple sprouting broccoli 🥦, podi, gur daal, moolo, fennel cauliflower, plantain peels, cabbage, gochujang, tomato and smoked tofu

4) 🥥 Coconut and mango semi freddo with strawberries 🍓

5) Mattha a savoury and very refreshing lassi / yoghurt like drink made from the end product of making ghee or butter

Had a very special lunch today at the acclaimed supper club headquarters 😄 at the lovely Sohini’s house. She kindly invited me along with other foodies and friends to experience a very unique spread of vegan #bengali dishes. I had a wonderful time and really enjoyed her delicious food and all the table conversations with such a lovely bunch of people. It was great to catch up with and. Also meet some very interesting foodies and media people and more. Huge thanks to Sohini’s husband Rjul who is an integral part of the #smokeandlimesupperclub experience.
The dishes were all very interesting and new to me. I specifically enjoyed the cabbage dish and the cauliflower dish. Really vibrant unexpected flavours, and the mustard oil was a pleasant surprise to my tastebuds.
Thank you Sohini and Rjul for your outstanding hospitality and for having today 🙏🥰

Vietnamese-Style Rice Paper Rolls (no-cook) Recipe!
Reposting from the good old days ✨

These rolls are my new obsession. They were first introduced to me by the lovely Cecilia, and I was hooked. They make a perfect healthy sharing appetiser or a super filling healthy lunch - a true joy to eat!!

➢ Shopping Basket: 1 pack of spring rolls wrapper sheets (rice pancakes) – 1 raw beetroot – 2 avocados – 1 large cucumber – ½ round lettuce – 1 large carrot – 1 zucchini – ½ small cabbage.
➢ Spicy Peanut Butter Dressing: 1 tbsp sugar-free peanut butter – 1 tsp Sriracha chilli sauce or more – 1 tbsp soy sauce – 1/2 lemon, juiced – 3 tbsp warm water.

1. Start by thinly slicing all the vegetables using a knife or zoodles grater. Lay them on a big chopping board next to each other. They make a beautiful array of colours that looks like an impressive artist palette.
2. On a large plate add some water, then take one rice sheet and immerse it in the water few times on both faces, until it softens. Then immediately transfer it gently without breaking it onto a dry plate, laying it completely flat and open.
3. Place few sticks from each vegetable, in the upper half of the circular sheet, then roll it up like a spring roll. Repeat until you run out of rice sheets and vegetables.
4. Make the dressing by mixing all the ingredients together until you reach a light creamy consistency. Serve the rolls along the spicy peanut dip or simply drizzle them over.
5. If you have chicken, beef or prawns’ leftovers, you are very welcome to slice them and add them into the rolls if you like. Delicious!

From a dimly lit kitchen to a feast layered with stories, this BTS reel is a reminder that food content is about much more than lighting - don’t get me wrong this is important but sometimes you have to make the best of a situation!

At, I joined an intimate class led by the amazing a British-Egyptian chef, writer, and food consultant whose passion for culture and cuisine filled the room as much as the aromas.

We made three beautiful versions of Fattah a traditional Egyptian dish that’s all about layering flavour and texture:

1. Chicken & Rice Fattah, tender shredded chicken, fragrant rice, garlic yoghurt & crispy pita

2. Minced Beef ( you can use lamb) & Aubergine Fattah, rich, spiced mince layered with smoky aubergine and tahini yoghurt

3. Chickpea Fattah (Veggie), a delicious option full of warming spice and texture

Each one built from the same foundations but completely unique in flavour.

What made the experience so special wasn’t just the food… it was Soha’s storytelling.

She shared memories from Egypt, cultural shifts, and even the “cheat” version she now swears by for busy days.

It was food content with soul.

We cooked in teams (shoutout to Kam and Madhuri!), laughed over garlic-heavy yoghurt, and finished with a table full of colour, crunch and comfort.
