Teig-Rezept:
200g glutenfreies Mehl (ich habe das von Schär für Kekse & Kuchen genommen)
200g blanchierte, gemahlene Mandeln
80g Kokosöl (geschmolzen)
18 EL Wasser
Die Zutaten einfach miteinander vermengen. Anschließend etwa 3/4 des Teigs in einer Pie-Form ausbreiten (30cm Durchmesser).
Für die Füllung habe ich einfach eine Packung Vanillepuddingpulver mit Kokosmilch aus der Dose (und Kokosblütenzucker) nach Anweisung zubereitet. Ich habe dafür das von dm (Bio Vanille Pudding) verwendet. Dazu habe ich 300g gefrorene Erdbeeren zusammen mit etwas Kokosblütenzucker in einer Pfanne erhitzt und köcheln lassen. Die Flüssigkeit, die von den Früchten ausgetreten ist, habe ich mit etwas Maisstärke (in ein wenig Wasser aufgelöst) angedickt und auf dem Teigboden mit einem Pinsel verteilt. Anschließend habe ich den mittlerweile etwas abgekühlten Pudding in die Form gegeben und anschließend die Erdbeeren auf diesem verteilt. Zuletzt habe ich den Rest des Teigs zu Streuseln zerbröselt und über die Masse gegeben. Das Ganze ist dann bei 180 Grad Ober-/Unterhitze für 25 Minuten in den Ofen gewandert. Und fertig ist der vegane, glutenfreie Streuselkuchen ✨
