This dessert is a collaboration between “meiji THE Cacao,” which explores new ways to experience and enjoy cacao beyond the boundaries of traditional chocolate, and “nib,” a lab dedicated to discovering the new possibilities of cacao.
Using the bright and fruity Madagascar cacao featured in meiji THE Cacao’s “Fruity Cacao,” we created a dessert inspired by the cacao and natural landscape of Madagascar. Madagascar vanilla, cacao meringue, matcha espuma with cacao dashi jelly, and roasted banana marinated with tropical fruits are layered together with cacao gelato and sauce to express the region’s vibrant flavors and atmosphere.
A meiji THE Cacao gift is also included.

シェフの眞砂がコスタリカのカカオ農園に行った時に感じたことをケーキにしました
歩くたびにパキパキと割れる落ち葉をチョコレートで、葉に雨が溜まっている様子をソースで、土や石をカカオパウダーやシュトロイゼルで飾り表現しました
カカオは日陰を好むので一緒にバナナ、ライチ、グレープフルーツ、マンゴー、パッションなどを育てている農家さんが沢山フルーツを振る舞ってくれたり、バナナを焚き火で焼いてくれたりした思い出もコンポートにして詰め込みました
ムースはマヤンレッドというカカオのシンプルなムースです
