Not even lying when I say you NEED this in your life!!! Trying not to be big headed but apparently this is my best bake yet 🤭
If you're a biscoff lover (like me!) then it's a must try! 😋
Crumbly base, creamy centre with caramel-ish burnt edges, topped with smooth biscoff spread ~ what's not to love? 🤩

Recipe below is for an 8 inch cake tin (adjust accordingly if you have a different size)
💫 Ingredients:
Base:
• 170g biscoff biscuits
• 70g unsalted butter
Cheesecake:
• 100g biscoff spread
• 380ml double cream
• 520g light cream cheese (I used Philadelphia)
• 100g white sugar
• 4 eggs
• 4 tbsp cornflour
• 1/2 tsp vanilla essence
• Pinch of salt
Decoration: [optional]
• 3 biscoff biscuits
• 70g biscoff spread
💫 Method:
1. Preheat your oven to 220°C.
2. Line your cake tin with baking paper so it is slightly taller than the tin and cut off any excess.
3. Crush/blitz the biscoff biscuits into a fine crumb for the cheesecake base.
4. Melt the butter in a pan.
5. Mix the crushed biscuits into the melted butter and press down firmly and evenly in the lined cake tin.
6. In a mixing bowl, combine the cream cheese and sugar until smooth.
7. Microwave the biscoff spread so it is soft and add to the bowl and mix thoroughly with the cream cheese
8. Add in the eggs and mix until well combined.
9. Add in the double cream, vanilla essence and pinch of salt and mix thoroughly.
10. Sift in the cornflour and again, mix thoroughly until there are no clumps.
11. Pour the mixture into your lined cake tin and bake for 35 mins.
12. Once complete, remove from oven, let it cool in the cake tin to room temperature where it will collapse in the centre.
13. When the cake is lukewarm, you can decorate it! Microwave the biscoff spread until runny and spread this evenly on top of the cake until all covered.
14. Crush 2 biscoff biscuits and sprinkle around the edge.
15. Place a single biscoff biscuit in the centre.
16. Place in the fridge to chill until ready to be served and eaten!
