Pancake Recipe
1 1/2 cups self raising flour
1 large egg
1 cup milk
2 tablespoons vegetable oil
Few drops of vanilla essence
Pinch of salt
Butter or oil for cooking
Place flour and salt in a measuring jug.
Make a well in the centre
Pour in the rest of the ingredients
Whisk it all together until mixed( don’t over whisk). It’s ok if batter is lumpy but make sure you don’t see any white strokes of flour anymore.
Heat a pan and coat with some butter or oil.
Pour big spoonfuls of the batter in a thick layer and cook for few minutes on both sides.
Serve warm with your toppings of choice and some honey or maple syrup.
