A community that once made up nearly half the city. A people who built its ports, filled its markets, spoke Ladino in its streets, and turned #Thessaloniki into one of the great #Sephardic centres of the world.
Before the #Holocaust, more than 50,000 Jews lived in Salonika. Between March and August 1943, the Nazis deported approximately 46,000–48,000 Jews to Auschwitz-Birkenau. The overwhelming majority were murdered upon arrival.
An estimated 94%–96% of Salonika’s Jewish community was destroyed, one of the highest percentages of #Jewish loss in all of Europe during the Holocaust.

Brought by Sephardic Jews from Spain and preserved across communities in Salonica, Rhodes, Turkey and beyond, this ceremonial bread symbolizes the giving of the Torah at Mount Sinai.
At the center sits Mount Sinai itself, a braided spiral loaf, surrounded by seven coils representing the Seven Heavens. Families would decorate the bread with symbolic shapes: Jacob’s ladder, birds, fish, flowers, Hamsas, and the Tablets of the Ten Commandments.
This year, I used my sweet challah recipe and decorated it with dried rose petals. You can also substitute the water with milk for an even softer, fluffier bread.
Sweet Challah Recipe (Half Recipe)
• 2 cups very warm water
• 3/4 cup sugar
• 4.5 tsp granulated yeast
• 4 cups + 3–3.5 cups unbleached all-purpose flour
• 1 1/2 Tbsp sea salt
• 1/2 cup canola oil
• 1/2 tsp vanilla extract
• 2 large eggs
Egg wash:
• 1 egg beaten
Challah Instructions: In a large bowl, pour in the warm water. Add the sugar and yeast. Allow a few minutes for the yeast to bloom. Add the first quantity of flour and all of the salt. Mix until a smooth batter forms.
Add the eggs, oil, and vanilla extract. Stir again until smooth. Gradually add the remaining flour, mixing until fully incorporated into the dough. Add only as much flour as needed to form a soft, workable dough.
Turn the dough onto a hard surface and knead for about 10 minutes, or until the dough springs back when lightly touched. Lightly oil a bowl and place the dough inside, turning once so the surface is coated.
Cover and let rise in a warm spot for 1.5–2 hours, until doubled in size. Pan de Siete Cielos Assembly:
Start with braiding a round challah. Roll out 7 long pieces, each one bigger than the last. Wrap them around the centre ball. Use the rest to decorate with symbols. Bake for 30-45 mins at 350°F. Decorate with dried roses.
Dough:
3 cups flour
1/2 cup yogurt
1/4 cup oil
1 stick melted margarine
1 small pack active dry yeast
1 teaspoon salt
If dough feels dry, add a little bit of water.
Filling:
mashed potato, ricotta cheese, 1 raw egg, salt to taste. I don’t measure. Use as much of potato or cheese as you like.
Make into dough and cover with plastic wrap. Refrigerate at least 1 hour to rise.
Roll out dough. Cut out rounds and fill.
Brush egg wash on top, sprinkle sesame seeds if you want.
Bake 350 F for about 30-45 min or until brown. #jewish #sephardiccommunity #jewishfood #jewishhistory
