. Cream Cheese Light Philadelphia
. Avocado
. Capper Berries

Such and easy recipe that you won’t believe it’s home made.
CURING MIX
- 1 Kg Coarse Sea Salt
- 500g White sugar
- 2 Lime zest
- 1 Lemon zest
- 1 bunch coriander
. Blend all the ingredients in a blender
. Cover fish with curing salt mix.
. Cure until firm (time depends on the thickness of the fish)
. Rinse with cold water
. Store in fridge for 15 minutes uncovered
COLD SMOKING
Why cold smoking?
To make smoked salmon you don’t want to add heat. This would cook the salmon instead.
Wood chips?
My favourite is Oak Wood for salmon. Apple wood also works.
Try to use a recipient as seen in the video. Nothing fancy, I bought everything on Amazon.
Repeat smoking procedure for 50min by burning the wood chips every 10 minutes.
