Seville oranges have arrived in the farm shop, and they’re absolute beauties, bursting with that bright, tangy flavour that makes a truly unforgettable marmalade. Whether you’re a traditionalist who loves a classic Seville blend or a creative soul dreaming up something different with booze, citrus and spices, it’s time for you to shine!

What we love most about this competition is how it brings our community together. Every year, jars arrive filled not just with marmalade, but with stories, family recipes, experiments, triumphs, and beautiful handmade labels. It’s one of our favourite traditions because it celebrates you, our Secretts community of food lovers.

Run by Lucy, who’s been part of the Secretts family for years, it’s where she works her gentle magic, crafting seasonal bouquets with her signature calm and care. You’ll often spot her in the corner, hands full of colour and texture, creating something beautiful for the stand.

Whether you’re after a grab‑and‑go bunch or something a little more bespoke, Lucy is always happy to help you find the perfect flowers to brighten your day.

This winter tarte tatin is made with Secretts’ seasonal beetroots and carrots. Slow roasted until sweet and earthy, it's layered with confit red onions, smoked garlic and a splash of balsamic vinegar for depth. Finished with creamy goat’s cheese, it’s the kind of cosy, comforting dish that brightens even the chilliest January day. A true celebration of the season!

INGREDIENTS:

500g beetroot, peeled and cubed
Small bunch of heritage carrots, peeled and cubed
2 large red onions, thinly sliced into rounds
3 cloves of smoked garlic, chopped
2 tbsp balsamic dressing or glaze
Oil for cooking
Salt & pepper
500g ready made sheet of puff pastry
Goat’s cheese
Baby basil

METHOD:

1) Heat the oven to 190C/170C fan
2) Add the beetroot and carrot to an oven proof dish, drizzle with oil and season well. Cover with foil and place in the oven for 35-40 minutes until tender.
3) Meanwhile, heat a pan with around 75ml oil and add the onion, season well and fry on a low heat until soft and glossy. Add the smoked garlic and cook for another 10 minutes. Drizzle over the balsamic dressing, cooking until the onions are a deep jammy red. Drain off the excess oil.
4) Flour your bench and roll the pastry out to around 0.5cm thick, to fit a 25cm baking tin.
5) Line the tin with parchment, tip in half of the confit onions, followed by the cooked beetroot and carrot, then the remaining confit onions. Pack down slightly with the back of a spoon. Place the pastry on the top, tucking the edges in over the vegetables.
6) Bake in the oven for 25-30 minutes until the pastry is golden brown. Use a knife to score around the outside of the pastry, place a plate over the top, then flip it out. Allow to cool slightly.
7) Top the tart with goat’s cheese and baby basil.

Winters' bounty has arrived on the farm with an abundance of cavolo nero, beetroot, carrots, kale, cabbages, parsnips, leeks and celeriac. It's wonderful to watch the shop filling up with a sea of green, cut through with a few sharp flashes of colour to remind us that this time of year isn’t all about grey skies.

For us, this is a season of quiet abundance and an opportunity to take the brakes off a little whilst the produce grows steadily beneath the cold ground. It's also a time to reflect on the year we've had, whilst planning new crops and new adventures for the year ahead. Roll on 2026!✨
