 A little “how to” on shucking oysters! đŸŠȘ

Step 1: Hold the shell up-side down with the hinge towards you.
Step 2: Firmly wiggle the knife into the hinge using a side-to-side motion just until the point of the knife is
wedged enough to gain leverage.

Step3: Twist the knife until you hear the shell “pop” & it slightly opens.
Step 4: Carefully slide the knife along the underside of the top shell to sever the top half of the abductor muscle.
Remove the top shell & discard.

Step 5: Pressing your thumb against the front edge of the shell for leverage, slide the knife under the meat & pull toward yourself to fully sever the abductor muscle & free the oyster completely.

Step 6: Drizzle some fresh lemon on top & enjoy!

Australia‘s Wine List of the Year reminisces on a time when “sitting by Circular Quay eating oysters was one of the greatest things to do in Sydney”.

After our relocation, we have heard this one quote a million times “Sydney’s loss is certainly Broome’s gain”.

We are so glad we were able to make an impact on this wonderful town and love seeing our efforts being recognised.

As most of you guys all know from our previous post, the Sydney Cove Oyster Bar is closing down for the 2022 season in Broome.

With that in mind, we are selling what is left of our stock.

We’ve still got plenty of goodies for everyone to have a big feast at home!

Today will be our last day. We were planning a more dignified and orderly exit but alas it is not to be. Like every business in Broome/Australia we have been struggling for staff for most of the season but it’s now gotten to a point we just cannot go on.
To do so would damage not just our soul but our staff and our reputation. So it’s a rap from us come close of business today.
