毎年この季節になると青大豆まだですか？とお問合せを頂くようになります、ありがたい事に根強いファンの方が多数いらっしゃるようで。
青大豆はいつも作っている白大豆に比べてやや甘味が強く、枝豆のような風味がするのが特徴です。風味を最も感じて頂けるように冷奴で食べるおぼろ豆腐として毎年製造しています。
今年は大豆の量が少なく5月〜6月半ばごろ限定で製造販売し
本店、十日市店、八丁堀店、鷹野橋店、移動販売で取り扱っています。

皆さま色々とやる事に追われ、ようやくお休みに入られる方も多いのではないかと思います。
ほんと突然ですが、年越しそばやります。
12月31日(水)11:00〜売り切れまで 佐々木豆腐店会長の手打ち蕎麦で、年越しそばの営業です。
※社内の皆さま、誤って23:00〜25:00と伝えてしまいましたが、僕の勘違いでしたごめんなさい。
なぜ突然蕎麦なのか。
告知にもなりますが、来年本店近くの旧cafe mame茶でお蕎麦の提供を始めさせて頂きます。
40年間、豆腐職人として佐々木豆腐店の豆腐、油揚げの製造をしていた会長の次の挑戦。
そして、手作りのお豆腐と手打ち蕎麦でどんな価値が生まれるのか。
色々と経緯はあるのですが、また改めて詳しくお伝え出来ればと思います。
三次市内で蕎麦店:生蕎麦屋を営まれていた、坂本さんとのご縁や蕎麦打ちの練習の日々なども。

一口に油揚げといっても様々な作り方、揚げ方がありますが佐々木豆腐店では【浮かせ揚げ】という方法で油揚げを揚げています。
正直とっても手間と時間がかかる揚げ方だと思いますが、一つ一つの揚げに目が届き、微調整を加える事が出来ると信じてこの方法を続けています。
油の温度が一定になるように終始かき混ぜながら、
膨らみのいまいちなものに、油をかける、少し沈ませるなどして調整を加えます。
その後低温である程度膨らんだ生地を高温の油でこんがりと揚げていきます。

There are countless ways to fry tofu, but we stick to our special “floating fry” method.
Yes… it takes more time and care, but it lets us watch every single piece closely and adjust for perfect results.
We keep the oil moving so the temperature stays just right, giving a little extra splash of oil or gently pressing down pieces that aren’t puffing up enough.
Once they’ve risen nicely over low heat, we turn up the heat and fry them until they’re golden, crispy on the outside, and fluffy on the inside. ✨

暑さもピークを迎え（今がピークだと思いたい）まもなくお盆を迎え、着々と夏が過ぎていくのを感じています。
製造現場では気温の高さと相まって煮釜からの蒸気で驚くほどの暑さとなり、熱中症の対策をしながらお豆腐をつける水の温度にも敏感になります。
さて、暑い暑い8月の月替わり膳は濃厚なもめん豆腐で作る棒棒鶏（ばんばんじー）がメインです。あまりエスニックな味付けではなく味噌ベースでご飯も進むよう工夫しました。冷たいお野菜と共に、さっぱりと美味しく召し上がってください。
