1 lb ground Italian turkey sausage
1/2 cup grated cheddar cheese
1/2 cup milk

Triple Bean Immuni-Chili ~ serves 6
2 tbsp olive oil
1 red bell pepper, seeded & chopped
2 large carrots, trimmed & finely chopped
1/2 onion or 2 tbsp minced onion
2 tsp cumin
2 tsp chili powder
1 lb ground meat (optional)
15 oz can pinto beans, rinsed & drained
15 oz can kidney beans, rinsed & drained
15 oz can cannellini beans, rinsed & drained
28 oz can petite diced tomatoes
2-3 chipotle peppers in adobo sauce, seeded & diced
1-2 tsp adobo sauce
1 tsp dried oregano
1 tsp salt
2 cups water or vegetable broth
Over medium-high heat, and oil to the bottom of a large pot. SautĂŠ bell peppers, carrots and onions until softened (1-3 minutes). Add spices and stir to coat vegetables. Spices will begin to toast slightly. Add in ground meat, if desired. Otherwise, add remaining ingredients and bring to a boil. Be sure to stir and scrape the bottom of the pot, where some of the flavor likes to sit. Once chili is boiling, turn heat to low and simmer for 20-25 minutes. Serve warm and garnish as desired!

Rise & Thrive Muffins - makes 12-15
2 cups oat flour, or flour of your choice
1/2 cup sugar
1 tbsp cinnamon
2 tsp baking powder
1/2 tsp salt
1/2 cup shredded coconut, unsweetened
1/2 cup dried fruit of choice (we used cranberries)
1 cup shredded carrots (4 small/medium sized carrots)
1 apple, shredded
8 oz can of crushed pineapple, drained
1/2 cup sunflower seeds
1/2 cup pepitas
1/4 cup chia seeds
1/4 cup flaxseeds
3 eggs
2/3 cup avocado oil
2 tsp vanilla extract
In a large mixing bowl, mix the dry ingredients together. Add in the shredded fruits and vegetables. Fold in the nuts and seeds. Whisk together the eggs, oil and extract and mix that into the batter until well incorporated. The batter will be thick. Scoop into lined muffin tin and bake at 350° for 30-35 minutes. ENJđ§Y!

Black Eyed Pea Bruschetta
3 tbsp olive oil
1 small onion, finely chopped
1 carrot, finely chopped
3 garlic cloves, minced
1 pound black-eyed peas; soaked overnight, rinsed and drained
(1) ham hock
1 quart chicken broth
2 bay leaves
salt & pepper
1 baguette, sliced & toasted
fresh Parmesan & finely chopped parsley for garnish
In a medium sauce pan, saute olive oil, carrots, onions and garlic until soft (approximately 6 minutes). Rinse and drain your soaked black eyed peas and add them along with the ham hock, chicken broth, and bay leaves. Season to taste. Bring to a boil, cover and reduce heat to low for 60-90 minutes, or until beans are soft. Drain and discard ham hock. Place black eyed pea mixture in a bowl and toss with 1/4 cup olive oil. Toast sliced baguette, top with warm black eyed peas, garnish and enjoy!

Santa Hat Appetizers
1 English cucumber, sliced 1/4â thickness
6-8 large grape tomatoes, halved
8 oz cream cheese, softened
5.3 oz container plain greek yogurt
1/2 tsp ranch seasoning
Combine cream cheese, yogurt and seasoning. Blend until smooth. Place in a piping bag or ziploc bag. Slice cucumbers and halve tomatoes. Pipe cream cheese on top of cucumber and top with half tomato. Garnish with additional seasonings like fresh chopped dill, basil or chives. Enjoy right away!

Christmas Lasagna
1) box no-boil lasagna noodles
SLN hearty bolognese sauce <see recipe below>
4 cups mozzarella cheese, shredded
2 cups Parmesan cheese, shredded
15 ounces ricotta cheese
(1) 6.3-ounce jar basil pesto
2 large eggs
½ cup parmesan, grated
đ SLN hearty bolognese sauce:
2 cups carrots, chopped
1 red bell pepper
8 oz sliced mushrooms
3 garlic cloves
1 cup walnuts
2 tbsp olive oil
1 1/2 tbsp Italian seasoning
1 tsp salt
1/2 cup red wine
24 oz jar of marinara sauce
⢠Start off by making the bolognese sauce. In a food processor, pulse carrots, bell pepper, mushrooms, walnuts and garlic 15-20 times. In a large sauce pan, heat oil and saute chopped vegetable mixture 5-7 minutes. Add seasoning. Next add wine, and cook for 2-3 additional minutes. Pour jar of sauce over the mixture, stir and cover. Simmer on low for 15 minutes.
⢠While the bolognese sauce simmers, prepare the basil pesto ricotta. Add ricotta, pesto, eggs and grated Parmesan to a medium mixing bowl, seasoning with pinch of salt and black pepper, or to taste. Stir until combined.
⢠Lastly, assemble the lasagna. In a greased 9Ă13 baking pan, ladle 1 cup of the bolognese sauce into the baking dish, spreading it out to evenly coat the bottom. Place lasagna noodles so that they covers the bottom of the baking dish. Ladle half of the remaining bolognese over top, spread out evenly and sprinkle 2 cups of mozzarella and 1 cup of shredded Parmesan cheese over the top. Arrange a second layer of lasagna. Start the second layer with another layer of lasagna noodle and but this time spread ½ of the basil pesto ricotta evenly over the top of the noodles. Repeat the bolognese layer and basil pesto layers one more time.
Cover lasagna with foil. Bake 375° for 60 minutes, remove foil and bake 5-8 minutes longer. Serve & enjoy!

Baked Oatmeal Cups - makes 12 cups
2 bananas
1/2 cup nut butter
1/3 cup honey
3 cup oats
1 tsp cinnamon
1/2 tsp salt
Toppings: yogurt, fruit, nuts, mini chocolate chips, additional honey to drizzle
In a medium bowl, mash the bananas. Add nut butter and honey, stir until well combined. Add oats, cinnamon and salt, stir again until well combined. Using a sprayed muffin tin, scoop 1/4 cup servings until each muffin tin and press down to the bottom of the pan and up the sides, forming a bowl. Bake at 350° for 15 minutes. Let cool completely. When ready to eat, fill the reservoir with yogurt, add toppings and ENJOY! Baked oatmeal bowls can be saved in the refrigerator for up to 1 week, or frozen for 3 months.

Preheat oven to 400°. Make a small slit down the middle of the tortilla, but only half way. Fold into a cone shape and place in a muffin tin hole, pressing down to flatten the bottom. Crack egg directly in the tortilla cup, top with add-one & bake 18-21 minutes, or until the egg is done to your liking.
