硬めに炊き上げたシャリは中トロ等の脂の多いネタとの相性がとても良い♪

逆に平目などの脂、水分量が少ないネタ（個体差、仕込みによる）は口の中でモタつきを感じる場合も多い🧐

逆に一條さんのような硬すぎず、柔らか過ぎないシャリは優しくネタと一体になるので色んな種類のネタと相性の良いシャリだと思う😋

浜焼きならいいのかもしれませんが、握りだとこの匂いってちょいとジャンキーにも感じます🥲

どうせ焼きで温度を上げるなら『昆布焼き』の技法がとってもオススメです♪

これなら表面に焼き目をつけることなく温度を上げることができます😊

私のこのみは35-38の間。所謂人肌です。

車海老の『甘味』にあたるグリシンが一番伝わりやすい温度は35度付近ってこともあって、車海老の繊細な味が伝わりやすいです🥰

また、高温で食べた時少し物足りなさを感じるのが香り…

茹でてから少しさました物のほうが海老本来の香りがわかりやすい♪

この二点で私が出した最適な温度は35-38度です♪

青空三代目の丸の内店さんの凄いところを『鮪』と『コスパ』意外のところで語りたい😊

ズームしてシャリを見たら一発でわかるんだけど、シャリの浸水を綺麗にしていて、炊き上げの水分をギリッギリのところで炊いてる。

合わせ酢も『保水』が難しい、凄い勢いで硬くなる配合になっている😅
.
このシャリは『切り落き』すると一瞬で固くなってシャリの劣化がすごいはず。
.
でもここの握りは口に入れた時それがないし、『切り立ての酢の立ち方』がする🧐
.
つまり無茶苦茶こまめに『シャリを炊いて切る』をやらないとこの味を確保出来ない😇
.
そんな『綱渡り』にも似たギリギリで難しいオペレーションをお店の職人さんがやってくれるから、ここは『美味しい』んだなって思う♪
