These Chicken & Potato pastry rolls are one of those dishes that make fasting days just a little bit smoother. Perfect for making ahead and storing for when you need something warm and filling after a long day. 🐔🥔🧀 Whether it’s for suhoor or iftar, these pasties are always a hit!
Here’s how I make them using my large Always Pan. 🫶🏽
* 1kg Chicken fillet (small cubes)
* 1 large potato (small cubes)
* 1 medium onion (finely chopped)
* 50g butter
* 1.5 tsp ginger/garlic paste
* Handful of fresh coriander
* Green chillies (to your taste 🌶️)
* 1.5 tsp salt (adjust to taste)
* 2 tsp coarse black pepper
* 2 tbsp cumin powder
* 1/4 cup red pepper (chopped)
* 1/4 cup sweetcorn
* 1/2 cup cheese (because who doesn’t love cheese?)
* Puff pastry sheets (ready rolled) I used
* 4 /5 tablespoons tbsp plain flour
Steps to follow:
1. Melt the butter and sauté onions until soft and golden.
2. Add the ginger/garlic paste, then toss in the chicken cubes. Season with green chillies, salt, and black pepper.
3. Once the chicken releases some juices, add the potatoes so they cook in that flavorful stock.
4. Add red peppers, sweetcorn, and cumin powder.
5. Once the potatoes are soft and the mixture thickens, stir in the flour.
6. Take it off the heat and mix in fresh coriander and cheese.
Now for the fun part! Roll out your puff pastry, place the filling in the center, fold it over, and freeze for a few hours. Once frozen, slice them into bite-sized pieces and bake or air fry until golden and crispy.✨
🫣 Quick Tip: I might’ve gotten a little carried away with the spice (it happens!), so I added a bit of cream cheese to balance it out. A total happy accident! 🤷♀️
Make a batch, freeze it, and you’ll have these little delights ready for whenever you need them—whether it’s for a flavourful suhoor or that moment after iftar when you’re craving something warm and comforting.
Trust me, these will become a Ramadan favorite! 😋

🤍 Now, let me tell you, my girls only eat my mum’s samosas—literally the first question they ask is, “Did Nani make them?” 😂
So I figured it’s time to level up and learn how to make them myself. And of course, because we love them so much, I’m sharing Nani’s recipe with you! 🥰
Ready for the ultimate samosa magic? Here’s how you make my ‘Nani’s samosas’—trust me, you won’t regret it! ⬇️
Ingredients:
1kg chicken mince (ask your butcher to mince it chunky!)
2 big onions, chopped
1 tbsp ginger garlic paste
1 tbsp coriander cumin powder
1 tbsp whole cumin seeds
1 tbsp green chili paste (or adjust to your spice level)
1 tsp salt (or to taste)
1 tsp garam masala
A handful of fresh coriander
A handful of fresh mint
A handful of spring onions
Method: 🧅 Chop your onions and wrap them in muslin cloth to soak up that extra water.
🔥 While that’s happening, cook your chicken mince on high heat with ginger garlic paste and cumin seeds. Break up any lumps so it cooks evenly!
🧂 Once the water starts to dry up, throw in your coriander cumin powder, garam masala, and salt. Stir well!
When the mixture’s dry and fragrant, take it off the heat and let it cool down.
If your onions are still a bit juicy, give them a quick sauté on high heat and add them to the mince. Taste and adjust the chili & salt to your liking!
🌿 Now, garnish with fresh coriander, mint, and spring onions. Once everything’s cooled down, you’re ready to fill those samosas!
