This cookbook reflects my journey from my birthplace, Japan, to the United States, and how I learned to cook Japanese food in a foreign country. Cooking and eating Japanese food has always been a cure for my homesickness, but it can be difficult to find some of the ingredients, so along the way, I learned how to cook the food from my childhood using local ingredients with Japanese staple seasonings. In this book, I’ve wanted to share all the tips and knowledge I learned from my mom, friends, culinary school, restaurant kitchens, and beyond.
I can’t thank my co-author enough. She so beautifully helped me write my story. This is a practical cookbook, but I hope you’ll enjoy reading the stories behind my recipes and journey. Most of all, I hope to inspire you to cook from it ☺️
