Additional Spices
* 4–5 tbsp salt (or to taste)

* 3–4 tbsp crushed coriander
* 2–3 tbsp cumin (zeera)
* 2 tbsp garam masala
* 1 tbsp black pepper
Whole Spices
* 8–10 bay leaves
* 10–12 green cardamoms
* 4–5 black cardamoms
* 12–15 cloves
* 2 cinnamon sticks
* 2 tbsp black peppercorns
Herb Paste
* 2bunches fresh coriander
* 1 bunch fresh mint
* Blend into a smooth paste with a little water
For Garnish
* Fresh coriander, chopped
* Fresh ginger, julienned
Instructions
1. Heat oil in a large pot and add all the whole spices. Fry for about 1 minute until fragrant.
2. Add the sliced onions and sauté until they become soft and lightly golden.
3. Add the ginger-garlic paste and cook until the raw smell disappears.
4. Add the chopped tomatoes and cook for 10–15 minutes.
5. Add all the Shan spice mixes and mix well.
6. Cover the pot and cook for another 10–15 minutes until the tomatoes become very soft.
7. Transfer half of the masala to a second pot to make cooking the large quantity easier.
8. Mix yogurt with black pepper, cumin, and a little salt, then add it to the curry.
9. Taste and adjust the seasoning with extra salt, red chilli powder, crushed coriander, cumin, and garam masala if needed.
10. Add the coriander and mint paste and mix well.
11. Add the lamb and cook covered until about 70% tender, which takes roughly 1 hour.
12. Continue cooking and bhunai (roasting the curry) until the lamb is fully tender and the oil starts separating from the masala.
13. Garnish with fresh coriander and ginger.
14. Serve hot with rice, naan, or roti.
Yield: Approximately 80–100 servings, depending on portion size.

Fish Curry Ingredients

* Salt to taste
* 1 tbsp lemon juice
For Fish Gravy
* 3 tbsp oil
* 1/2 tsp fenugreek seeds
* 1/2 tsp nigella seeds
* 1/2 tsp mustard seeds
* Curry leaves
* 1 onion (finely chopped)
* Water as needed
* 1/2 tsp whole spice powder (garam masala powder)
* Fresh coriander (chopped)

Instructions
Step 1 – Marinate the Fish
1. Wash the fish properly with water.
2. In a bowl, add yogurt, red chili powder, turmeric powder, coriander powder, ginger garlic paste, salt, and lemon juice.
3. Mix well and coat the fish evenly.
4. Marinate for 1–2 hours.
Step 2 – Prepare the Gravy
1. Heat oil in a pot.
2. Add fenugreek seeds, nigella seeds, mustard seeds, and curry leaves. Sauté for 1 minute.
3. Add finely chopped onion and fry until light golden.
Step 3 – Cook the Fish Curry
1. Add the marinated fish and cook on high flame for 5–7 minutes or until oil appears on the surface.
2. Add water, cover, and cook on medium-low flame for 10–15 minutes.
3. Add whole spice powder and fresh coriander.
4. Simmer for 2–3 minutes.

300g boneless chicken (cubes)
3 tbsp yogurt
1 tbsp lemon juice
1 tbsp ginger garlic paste
1 tsp red chili powder
½ tsp turmeric
1 tsp garam masala
1 tsp cumin powder
1 tsp coriander powder
1 tsp paprika
½ tsp black pepper
1 tsp salt (or to taste)
1 tbsp oil
For Pasta & Sauce:
250g pasta (penne or fettuccine)
2 tbsp butter
4 garlic cloves (finely chopped)
1 cup cream
½ cup mozzarella or cheddar cheese
½ tsp black pepper
½ tsp salt (adjust to taste)
Method / Details:
First, I marinated the chicken with yogurt, lemon, ginger garlic, and red chili powder, turmeric, garam masala, cumin powder, coriander powder, paprika, black pepper, and salt.
Then I let the chicken rest for 10–15 minutes.
Meanwhile, I boiled the pasta in salted water.
Then I cooked the chicken until it was fully done with a slight char.
Next, I moved to the sauce — melted butter in a pan, added garlic, and as soon as it became fragrant, I added cream.
Then I added mozzarella or cheddar and made a smooth, creamy sauce.
After that, I added the pasta, then the juicy chicken tikka, and gently mixed everything together.
