Oh my goodness, I’ve missed posting on here so much! I decided to take a rather long break for a bit as I wasn’t “feeling it” after going through a busy few months where my priorities had shifted. However, I occasionally shared some stories on this page and so many of you DM’d me and said that you missed my recipes 🥹. It’s the love and support that brought me back ❤️

Anyway, I posted a story of my fluffy pancakes yesterday and I received so many messages asking for the recipe. I’ve always struggled making pancakes the perfect way. But I finally cracked the code to make the most perfect, fluffy pancakes. The secret is in whisking the egg whites separately, using both baking powder and baking soda and adding a pinch of salt to the batter. THAT’S IT! For this recipe you’ll need:
- 1.5 cups all purpose flour (you can use any flour)
- 1 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 eggs
- 1 cup milk
- 1 tsp vanilla sugar/extract
- Pinch of salt
- Butter for pan frying
- Fruit of choice
🥞 Add the flour, sugar, baking powder & soda and vanilla sugar to a bowl and mix
🥞Separate the egg whites from the yolks
🥞Add the milk to the egg yolks and whisk together. Then add the mixture to the flour and mix well
🥞 Whip the egg whites and add them to the mixture. Mix well and make sure there are no lumps. If your mixture is rather thick, you can add a bit of milk as needed
🥞Add the salt and give it a final mix. Tap the bowl gently for any air bubbles
🥞Add a bit of butter to a hot and pour about half a ladle of the mixture onto the pan
🥞 Cook until you see bubbles start to form at the surface, flip and cook for another minute or so. Enjoy with your favorite toppings

Yesterday I was a bit adventurous and decided to make a Nando’s inspired dinner at home. The challenge for me was to make everything from scratch and this inspired me to make my own peri-peri sauce at home. To make the sauce, you’ll need:
- 1 large yellow onion 🧅
- 1 red bell pepper 🫑
- A few green chillies based on your spice tolerance 🌶️
- 1 tbsp chili paste or sambal 🌶️
- 4-5 garlic cloves 🧄
- 1-2 tsp paprika powder🥄
- Zest and juice of a whole lemon 🍋
- Some vinegar 🫙
- A tablespoon honey 🍯
- Salt and black pepper to taste🧂
- A drizzle of olive oil
Preheat your oven to 200 degrees. Peel and slice the onion in half. Place the onion, garlic (with the skin) and the whole red pepper in a roasting tray. Coat them in a light drizzle of olive oil. Place the tray in the oven and roast for 20 mins. You can also do this over a gas flame. When done, remove them to a bowl, cover with cling wrap and let them sweat. Then, peel the skin off the red pepper and de-seed it; also peel the garlic. Place the veggies in a blender together with the lemon zest and juice, chillies, chili paste, black pepper(corns) and some honey and blend until smooth. Place the sauce in a pot and let it cook on medium heat for 5-8 mins or until it thickens. You can add some water if needed. Add salt, vinegar and paprika powder to taste and cook for a couple more minutes. Adjust the seasoning according to your taste and turn off the heat. Store in an airtight container and use it as a sauce or as a marinade.

I used it as a marinade for the peri-peri chicken and it tasted pretty close to the real deal!! I was so pleased 😍. The coleslaw and baked chunky chips are also homemade.

If you know me, you know that I love to jump at any chance I get to cook for family and friends and together with my husband, we prepared this delicious Sunday Roast as a birthday present. What was great about this meal was how we all sat together and enjoyed each other’s company and a great evening. We are so blessed to have the best neighbors around us. When you live away from family, you struggle to find a community around you buy we were welcomed into our lovely neighborhood just as their own. We found family in a foreign land which definitely makes our home feel like home 🏡🫶🏻

My husband and I come from extremely different cultures and backgrounds but I love how he appreciates every single meal I prepare and dish out for him. On some days it’s a very British sausage and mash, on some days it’s chicken and vegetables and on some days it’s pasta and salad but on most Sundays it’s some kind of curry, rice and vegetable- something that I grew up eating on the weekends at home. Whenever I can, I keep the tradition alive and my wonderful husband loves it (but mostly because he also loves Indian food 😂). He often tells me the best Indian food he’s had is every meal I make 🥹 but that’s also what makes a meal delicious right? The love you put into it…

I’m back after months!!! It’s safe to say I’ve missed posting here but life got so busy in the midst of planning a wedding - I just had to take a break!

Salt & Pepper Chicken is a dish that my husband and I loved as our standard Chinese takeout when we lived in the UK. It’s difficult to find it here in NL so I decided to make it myself and surprise him.

I’d never made it prior to this attempt and it’s just one of those dishes that you try to re-create based solely on your memory of how it tastes- and that’s exactly what I did. I coated chicken thighs (cut in bite sized pieces) in salt, pepper, garlic powder, cayenne pepper, vinegar and corn flour and baked it in the oven for about 30 mins. Then I heated some oil in a wok, tossed in freshly chopped ginger, garlic, chillies, chunks of onion and bell peppers and sautéed them for a while. I added a powdered stock cube, some black pepper, a drizzle of light soy sauce, few drops of fish oil (for that umami goodness), and a pinch of pomegranate molasses. After I mixed everything I added the chicken back in and cooked it for 2 minutes on high heat and finally garnished it with spring onions.

I served it with chili garlic noodles but you can serve it with anything you prefer.

Made this delicious Mexican delight inspired by my favorite 🥰. I LOVE Mexican food and anything with chipotle chilies in adobo sauce has my name written all over it! Can’t believe how easy these are to make and perfect for a weeknight dinner, especially on a busy day/week. If you’re lucky, you’ll have loads of leftovers (like I did) and won’t need to cook for a couple of days 😂

has a done a great job in bringing authentic Bombay street flavors to the table. We tried: Rose Milk and Mango lassi for drinks which were absolutely refreshing after a long day. The dahi puri was perfect and reminded me of the beautiful ‘chaat’ that is sold on the streets of Mumbai 😍. I loved the prawn Koliwada as well, which was crispy and did justice its name. Their curries are fantastic and I think the garlic naan was one of the best I’ve tried! I was so happy to also try their traditional Indian desserts: Gulab jamun and Gajar halwa which I think I probably had after 5ish years!!

I also had the opportunity to speak with one of their chefs whose passion for educating people about Indian food abroad beamed through his words and his delicious food. I’d definitely encourage you to visit for some beautiful Indian flavours. You’ll leave with a big smile and a happy tummy! 🥰

Spring has finally arrived here in Holland and for some reason I crave Dal chawal (lentils with rice) very often these days. This is one dish that reminds me of home and brings home to me instantly when it’s on my plate. I can eat it everyday 😁. Dal chawal is known to be a complete meal and one of the healthiest meals you can ever have; carbs, protein, fats, fiber and everything else!!! I love having it with some grilled mirch (chilli peppers) and achaar (Indian pickles).
