Salsa Recipe:
• 1 ripe mango, finely diced
• 1 ripe avocado, diced
• ¼ red bell pepper, chopped
• ¼ green capsicum, chopped
• ¼ red onion, chopped
• 2 tbsp coriander
• 1 tbsp lime juice
• Salt to taste
• ½ tsp paprika powder
Guilt-Free Paneer Dip:
• ½ cup paneer (crumbled)
• 3 tbsp Greek yogurt
• 2 tbsp coriander
• 1 green chilli
• Salt + black pepper to taste
Blend till smooth.
Wrap:
• Dip rice paper in normal water for 15 sec
• Spread paneer dip on the rice paper first
• Layer with mango avocado salsa
• Fold sides in, roll tight from bottom
• Slice diagonally
• Serve cold

Ingredients:
-For Crispy Mushrooms
Mushrooms – 400 g (cut)
Salt – to taste
Red chilli powder – 1 tsp
Refined flour (maida) – 1 cup
Cornflour – 1 cup
Oil – for frying
-For Chilli Mushroom Toss
Oil – 1 tbsp
Onion (diced) – 1
Ginger (chopped) – 1 tsp
Garlic (chopped) – 1 tbsp
Green chilli – 1
Coriander stems (chopped) – ½ tsp
Bell peppers (red, green, yellow) – 1 cup
Real Thai Black bean wok sauce – 2 tbsp
Real Thai Sriracha sauce – 1 tbsp
Water – 2–3 tbsp
Cornflour slurry – 1 tbsp (Mix cornflour 1 tbsp + 4 tbsp water)
Salt – to taste
Black pepper – ½ tsp
Spring onions – 1 tsp
Fresh coriander – 1 tbsp
Sesame seeds – 1/4 tsp
-For Pickled Onions
Onion (sliced) – 1
Beetroot (small piece, julienne)
Salt – pinch
Lemon juice – 1 tbsp
-For Assembly
Lachha paratha / wrap – 2
Real Thai Sriracha mayo – 2 tbsp
Method:
-Cut mushrooms and mix with salt and red chilli powder.
-Rest for 5 minutes until they release water.
-Coat & Fry
-Add refined flour and cornflour. Toss until mushrooms are well coated.
-Deep fry until lightly golden.
-Rest for 2 minutes, then double fry until crispy.
-Heat oil in a wok.
-Add onion, ginger, garlic, green chilli and coriander stems. Sauté on high flame.
-Add bell peppers and toss briefly.
-Add Real Thai black bean sauce, Real Thai sriracha and a little water.
-Add cornflour slurry, salt and black pepper, mix well.
-Add crispy mushrooms, toss well
-Finish with spring onions, coriander and sesame seeds.
-Make Pickled Onions
-Mix sliced onions, julienned beetroot, salt and lemon juice. Rest for 30 mins.
-Shallow fry lachha paratha / wrap until crisp.
Roll Assembly:
-Place chilli mushroom and pickled onions.
-Drizzle Real Thai sriracha mayo.
-Roll tightly and enjoy!
