Ingredienti
• 1 confezione di pasta fillo
• 250 g di ricotta
• 1 uovo
• 2 cucchiai di parmigiano grattugiato
• pomodorini ciliegini
• pesto q.b.
• Prosciutto Crudo Raspini
• pinoli
Per l’emulsione
• 40 ml di olio extravergine d’oliva
• 40 ml di acqua
• origano
• 1 spicchio d’aglio
• un pizzico di sale
Procedimento
Versa acqua, olio, origano, sale e lo spicchio d’aglio in un barattolo. Chiudi con il coperchio e agita bene fino a ottenere un’emulsione.
Sovrapponi tutti i fogli di pasta fillo spennellando (o distribuendo a gocce) un po’ di emulsione tra uno e l’altro.
Mescola ricotta, uovo, parmigiano, un filo d’olio, origano e un pizzico di sale, quindi distribuisci la crema sulla base.
Completa con i pomodorini tagliati a fettine e conditi con olio, sale e origano. Ripiega i bordi verso l’interno e cuoci in forno ventilato a 200°C per circa 20 minuti.
Una volta sfornata, aggiungi il pesto, i pinoli tostati e termina con le fette di Prosciutto Crudo Raspini.
