This is MY version of the famous longevity soup. I’ve tried a few variations of this and decided to omit the pasta and switch up the beans! Obviously you can play around with the beans you like but white beans and green beans are my favorite. I also enjoy the texture of kale in the soup and the flavor of fennel.
MY INGREDIENTS:
6 tbsp evoo, 1 yellow onion chopped,3 celery stalks & 2 lg carrots peeled, and chopped. 3 tablespoons tomato paste, 4 garlic cloves minced, one can of organic /no salt crushed tomatoes, one medium size, gold potato peeled and diced, fennel chopped or three large stems of kale peeled off the stem and chopped,1/4 cups of chopped parsley,1/4 cup torn basil, 2 tablespoons dried oregano, 2 bay leaves, 1 can of cannelloni or white beans, a package of organic green beans ( trim ends off& chop ), 4 cups of organic & low sodium vegetable stock
