Smoky grilled asparagus meets a rich, roasted romesco made with charred peppers, tomatoes, garlic, and toasted almonds for the ultimate spring side dish. Finished with lemon and Parmesan, it’s simple, vibrant, and made for patio season.

We love using local asparagus this time of year — it’s one of the first signs of spring in Ontario and tastes best when it’s fresh, bright, and in season.Save this one for your next BBQ.

Ingredients:
For the Asparagus
1 bunch local asparagus, wood stalks removed
1 tbsp extra virgin olive oil
Salt and pepper, to taste
Squeeze fresh lemon juice, to taste
Parmesan cheese, to taste
For the Romesco
2 red peppers, quartered lengthwise, stems and seeds removed
2 tomatoes, cored and halved
1 head garlic, left intact
1 thick slice day-old bread, toasted or grilled
¾ cup blanched almonds, toasted
¼ cup chopped fresh parsley
¼ cup extra virgin olive oil
1 tbsp red wine vinegar
1 tsp smoked paprika
1 tsp salt
½ tsp black pepper

Instructions
1️⃣ Preheat grill to high heat. Toss peppers, tomatoes, and garlic with olive oil, salt, and pepper.
2️⃣ Grill peppers and tomatoes cut-side down with the whole garlic head for 5–7 mins until nicely charred. Remove tomatoes once softened. Continue cooking peppers and garlic until tender and charred all over. Cover and cool slightly.
3️⃣ Toss asparagus with olive oil, salt, and pepper. Grill perpendicular to the grates for 4–8 mins, turning every couple of minutes, until tender and lightly charred.
4️⃣ Peel most of the skins from the peppers and tomatoes. Squeeze garlic from the skins. Add all grilled vegetables and juices to a food processor with bread, almonds, parsley, olive oil, vinegar, paprika, salt, and pepper. Blend until your desired consistency.
5️⃣ Spread romesco onto a serving plate and top with grilled asparagus. Finish with lemon juice, Parmesan, and extra salt if desired. Serve warm.

👨🏻‍🍳👩🏽‍🍳 Chef’s Tip: If using raw almonds, toast in a dry skillet over low-medium heat for 5–7 mins until golden and fragrant.

→Hot Honey Dijon Sheet Pan Salmon & Asparagus Recipe
Sauce (same as the 60-sec dressing + more honey, dijon & chili flakes)
Ingredients
½ cup extra virgin olive oil (EVOO)
3 tbsp red wine vinegar or apple cider vinegar
½ tsp of your favourite spice blend (I love using za’atar or Herbes de Provence)
2 tbsp honey
1 tbsp dijon mustard
½ - 1 tsp chili flakes
¼ - ½ tsp kosher salt
Black pepper, to taste

Salmon & Veggies
4 6oz salmon fillets
1 bunch, woody ends removed
1 red bell pepper, sliced 2 inches thick

Instructions
Preheat the oven to 425F. Line a large baking sheet with parchment and set aside.

Add all sauce ingredients to a jar, secure with a lid and shake vigorously until emulsified.

Scatter asparagus and sliced bell pepper on the baking sheet, and drizzle with 2 tbsp of the sauce, tossing to coat. Nestle the salmon fillets between the vegetables, season with salt and pepper. Drizzle some of the sauce over the fillets, then use a brush to spread the sauce evenly over the top and sides of the salmon. Transfer the tray to the oven and roast for 15 minutes.

Remove the tray from the oven, drizzle a little more sauce over the salmon and veggies, then serve and enjoy!
