February was a powerful month for us at Po’Boy & Tings — filled with culture, community, and unforgettable moments.
From Mardi Gras celebrations to behind-the-scenes kitchen action, customer first-bite reactions 🤤🔥, and special sit-down interviews with, the energy all month long was something special.
This month also held space for something deeper as we honored the life and legacy of my father — a reminder that family and purpose are behind everything we build here. Thank you to everyone who showed love and support during that time. His spirit lives on in every plate we serve. 🕊️
Between the Mardi Gras vibes and the city celebrating after the Super Bowl XLVIII parade for the Seattle Seahawks, February reminded us what Po’Boy & Tings is all about: community, culture, and incredible food.

But before you pull up, here are 3 quick Po’Boy fun facts you might not know 👇
📜 Fun Fact 1 – The Name “Po’Boy”
Back in 1929 in New Orleans, two brothers who owned a sandwich shop started feeding streetcar workers who were on strike and had no money. Whenever one walked in they’d say, “Here comes another poor boy.” The sandwiches they made for them became known as “poor boys”… which eventually turned into “Po’Boys.”
🥖 Fun Fact 2 – The Bread Matters
A real Po’Boy is traditionally served on New Orleans–style French bread — crispy on the outside and soft on the inside so it can hold all that filling without falling apart.
🥬 Fun Fact 3 – “Fully Dressed” Is the Way to Go
In New Orleans, when you order a Po’Boy “Fully Dressed,” it means it comes dressed with lettuce, tomato, pickles, and mayo (we use Chef Sean’s secret sauce instead, a Seattle twist) — the classic way locals enjoy it.
Now that you know the history… it’s time to taste the tradition 😮🔥

For more than 30 years, he served this city through the Seattle Police Department, rising to Lieutenant while mentoring and uplifting so many along the way. But titles never defined him — people did. He was “Coach,” “Popz,” and “Uncle Ronnie” to a community he poured into, always believing that a life well lived is measured by what you give to others.
To us, he was our foundation. A devoted husband, a proud father and grandfather, and the kind of man who made everyone feel seen, supported, and loved.
As we move forward, Po’ Boy & Tings will always run and serve our flavors in the name of my father. Every plate is part of his legacy — the love, the culture, the community, and the spirit he instilled in all of us.
Tomorrow, we lay you to rest and send you off with nothing but love. Though our hearts are heavy, we are grateful for every lesson, every sacrifice, every embrace.
We carry you with us in everything we do.
Rest well, Dad. Your impact lives on forever.

Everything we do is built on generations of family tradition, faith, and Southern hospitality. And truthfully, none of this would be where it is today without my father. 🙏🏾 His sacrifices, discipline, and love for our culture laid the foundation for everything you see. I honor him with every plate that leaves our kitchen.
Seattle has embraced us in such a beautiful way, and we’re beyond grateful. When you walk through our doors, we want you to feel like family — to eat good and leave feeling loved.
Thank you for sharing our story, and thank you to everyone who’s supported us over the years. Pull up, get you a plate, and stay tuned for what we’ve got planned for March — we’re just getting started.”

Huge thank you to for having me! This family-owned New Orleans–inspired spot just opened in November 2025 and is currently in a soft launch — but don’t get it twisted, they are VERY much open and ready to take orders. Their grand opening is January 6, and trust me… you’ll want to be there.
From the very first bite, you can taste the real, authentic flavors of New Orleans. Everything was seasoned to perfection, comforting, and made with love. But what really stood out? The hospitality. I was welcomed like family the moment I walked in, and that energy carried through the entire experience.
Located in Ballard, this spot is one you need to stop by and try. And while you’re there, you can head right next door to (they share the same space!) and grab a beer to wash it all down 🍺🔥 — elite combo.
If you love discovering dope food spots before everyone else, this is your sign. I’ll keep finding the gems for you… just make sure you’re following me for more 😉✨
