Ingredients:
1/2 cup frozen peas
1 cup boiling water
Squeeze lime juice
1/4 tsp miso
1/2 tsp vegan mayo
1/2 tsp vegan cream cheese
Salt and pepper to taste
Method:
1) Pour the boiling water over the peas and allow to defrost for a couple of minutes
2) Drain the peas and blend with the rest of the ingredients. Get creative with tomatoes, onions or if it’s too thick add like a 1/2 tsp of water etc. but season to taste with salt and pepper:)

You will need:

1 tbsp oil
2 tbsps vegan butter
1 onion
5 cloves garlic
1 thumb ginger
1 tsp: ground coriander, ground cumin, ground cardamom, paprika, garam masala
1 tbsp: tomato puree, salt, sugar, pepper
400g tinned tomatoes
200ml water
2 x 400g chickpeas tinned
2 tsps veg stock powder
1/4 cup soy cream
For the naan: 350g plain flour, 7g yeast, 1 tsp salt, 1 tsp sugar, 3 tbsps oil, 120g vegan yoghurt, 130ml warm water
Method:
1) Put on the comfiest pants ever and mix together your dry naan ingredients, then knead in the wet ingredients. Cover and prove for 90 mins
2) Saute the onion in oil on a med-high heat, then add the garlic and ginger and 2 mins later, the spices with the butter
3) After a couple more mins, add the tomato puree and cook until it splits (3 more mins)
4) Mix in the chopped tomatoes and blend until smooth
5) Add the rest of your ingredients to the pan with the smooth sauce, mix well and simmer gently for 20-30 mins
6) Divide the naan dough into 6 pieces and roll out. Fry in a pan on a high heat until golden/brown on each side (2-3 mins), cover in vegan garlic/herb butter and serve with fluffy basmati rice

This carrot and coriander soup is similar to the way my Mum made it, lots of lime juice and spices, it’s warm, comforting and always makes me smile 😊
Ingredients:
1 onion
5 cloves garlic
1cm ginger
5 carrots
1 potato
1 tsp cinnamon, cumin seeds, garlic powder, mixed dried herbs
1 tsp caster sugar
1/4 cup red lentils
1 tsp harissa
2 tsps bouillon powder or veg stock
Large handful coriander
Juice 1 lime
Salt and pepper to taste
Method:
1) Peel all your veg and add the scraps to a pan. Cover with water and 1 tsp bouillon, cover and leave to simmer whilst you finish prep and start cooking.
2) Saute the onion in a large saucepan with a little oil and the sugar for about 4-5 minutes and then add the garlic and ginger
3) When fragrant (1-2 mins) add the spices and then after a couple more mins mix in the carrot, potato, harissa and lentils, then strain the simmering veg scraps to add your veg stock to the pot (top up with water if needed until all the veg is submerged)
4) You can cover and simmer for 40-45 mins or pressure cook for 5 mins and steam naturally for 15
5) Add the coriander and lime juice then blend until smooth. Season with salt and pepper to taste

2 slices sourdough
1/2 avocado
Pinch salt and pepper

Splash olive oil
Method:
1) Smash the avocado and mix with all the ingredients but the pistachios, bread and oil
2) Heat the oil in a pan and toast the bread until golden on both sides, then top with the smashed harissa avocado and sprinkle with the crushed pistachios

Other veg (customise): I also used a cup of peas, and some leftover kale and beans that I had

1 cup vegetable stock
2 cups oat milk
4-5 tbsps coconut or soy cream (I used a mix of both)
1 tbsp oil
More salt and pepper to taste
Method:
1) Heat the oil in a pan and saute the onions until soft, then add the carrots, potatoes and frozen veg (corn and peas for me)
2) Add the spices and saute for a few mins, then add the stock, milk and any other veg that you don’t mind softening. Anything like beans for some crunch I leave for now and add in at the end
3) Simmer for 20-30 mins until all the veg is soft, then mix in the beans and simmer for another 5 minutes
4) Mix through the cream and remove from the heat. Serve

Ingredients
1 swede/rutabaga
2 tbsps salt
1 tsp pepper
1 tsp cumin
2 tbsps olive oil
Large handful parsley
1/4 pomegranate
1 tbsps honey

Method:
1) Peel, chop and par-boil the swede with 1 tbsp salt for 5-10 minutes until a knife glides through fairly easily
2) Drain and toss with 1/2 tbsp salt, 1 tbsp olive oil and the pepper and cumin. Airfry at 190 for 20-25 minutes
3) Chop the parsley and mix with the chilli, honey and the rest of the olive oil and salt
4) Toss the cooked swede with the herby honey and serve covered in pomegranate seeds. Add a pinch more salt if needed

Anyway, vegan cabbage rolls.
Ingredients:
1 sweet potato
1 onion
3 cloves garlic
2 cm ginger
1/2 cup red lentils
1 tsp: ground coriander, turmeric, curry powder, fennel seeds, cumin seeds, salt
400ml tin coconut milk
1 tsp vegetable stock powder
1/4 cup boiling water
4 cardamom pods
1/4 or 1/2 dried chilli
10-15 savoy cabbage leaves
Method/
1) Grate the sweet potato, finely dice the onion and mince the garlic and ginger
2) Add these to a bowl with the lentils, spices and salt
3) Open the coconut milk tin and scoop out the cream from the water if it’s separated and add the cream to the bowl. If the can of milk is fully combined, just add 1/3 of the milk to the bowl. Mix well
4) In another bowl, dissolve the veg stock in the boiling water, then add the rest of the coconut milk/water, cardamom pods and dried chilli
5) Steam the cabbage leaves until pliable, then cut out the base of the stem, add 1 heaped teaspoon of potato/lentil mixture and roll up like a parcel
6) Heat oil in a pan and fry the cabbage rolls on a high heat for a couple of minutes until the base starts to brown, then pour in the stock/coconut milk mixture, cover the pan and bring the heat down to medium-low
7) Simmer for 35-40 mins, then uncover and remove the cabbage rolls, cardamom pods and chilli (you can bin the cardamom and chilli)
8) Pop the liquid remaining in the pan back on a high heat until the liquid becomes a thick sauce
I like to serve these with rice but you can totally just smash on its own 🤩

1 onion
1 red pepper
4 cloves garlic
2 handfuls cherry or plum tomatoes
Handful fresh parsley
1 tsp miso
1/2 - 1 tsp chilli flakes (to taste)
Juice 1/2 lemon
Salt and pepper to taste
Good glug of olive oil
Splash of white wine
Enough linguine for 2 people
About 1/2-1 cup boiling water
Method:
1) Finely dice the onion and sauté in the olive oil for 3-4 mins until soft, then add the finely diced red onion and stir for another few minutes
2) Add the minced garlic and tomatoes, and when the garlic starts to catch and the tomatoes are blistering, deglaze the pan with wine
3) Add the miso, lemon juice, chilli flakes, salt and pepper and stir to remove any miso lumps
4) Add the pasta and about 1/2 cup boiling water, add more water as the pasta starts to cook like you would a risotto - stop when the pasta is cooked and you have a thick sauce (should not be watery)
5) Finish with fresh herbs and enjoy!

1 broccoli

2 tbsps lemon juice
3 tbsps olive oil

1/2 tsp: salt, pepper, chilli flakes, garlic powder, italian seasoning
2 tbsps pine nuts
Method:
1) Slice the broccoli into chunks and thinly slice the garlic into flakes
2) Mix together the oil, miso, lemon juice and seasonings and then toss with the broccoli, garlic and pine nuts
3) Bake or airfry at 190C/200C until browning and cooked through - about 15-30 mins (quicker to airfry)
