1/2 כוס אורז עגול

3 גילופי קליפות לימון
50 גרם חמאה
מחממים בסיר את החלב והשמנת (לא להגיע לרתיחה מלאה) ביחד עם הקינמון והקליפות לימון. כשחם מוסיפים את האורז, מורידים את לאש קטנה ומבשלים עד שמסמיך (זה לוקח בערך שעה). מוסיפים את הסוכר והחמאה, מערבבים ומוציאים את הלימון והקינמון. מצננים ומעבירים לקעריות הגשה.

100 גרם חמאה
1 כוס קמח
2 ביצים
עוד קמח לציפוי
פירורי לחם (1/2 רגיל, 1/2 פנקו)
קצת מוסקט
שמן לטיגון
מלח
טונים את הפטריות בפולסים קצרים. מטגנים את התערובת עם שמן זית ומלח על אש בינונית, היא צריכה לצאת קצת עיסתית ורטובה, מוציאים התערובת לקערה.
בסיר קטן מחממים את החלב אבל לא להגיע לרתיחה.
באותה המחבת של הפטריות שמים את החמאה על אש בינונית וכשנמסה את הקמח, טורפים היטב. מוסיפים בהדרגה את החלב החם החם עם מצקת וכל פעם מערבבים עד שנטמע.
מוסיפי מוסקט, ממליחים ומוסיפים את התערובת פטריות. מערבבים להומוגניות וסמיכות.
מעבירים לתבנית, משטחים, מצפים בניילון ומעבירים לקירור רצוי לכמה שעות.
משמנים ידיים ומכדררים. מצפים בקמח, ביצה (שקצת עורבבה גם עם חלב) ומהתערובת פירורים - פנקע.
מטגנים על אש בינונית אבל לא יותר מדי גבוהה כדי שהקרוקטים לא יתפוצצו. אוכלים.

תה שחור מעושן (!) אפשר כמובן הלי ואז זה סרדין כבוש ולא מעושן
כותשים את התה ומערבבים עם המלח
מניחים את הסרדינים עם העור כלפי מטה על תבנית מלח ומעל כל סרדין מפזרים מהתערובת מלח-תה. מכסים בניילון נצמד ומעבירים לקירור לכ-40 דקות.
שוטפים את הסרדינים מהמלח בקערת מים קרים מאוד ומייבשים. אני אוהבת לקלף את העור (אחרי הכבישה זה ממש קל). שמים בקופסא עם שמן זית ודומרים במקרר.
אוכלים עם כל דבר, אבל הכי טעים- לחם קלוי עם חמאה, פלפל ירוק חריף ובצל סגול קצוץ או בצל ירוק.
